A great example of this is if you play the game 'I Love Hue'. It's just a color sorting game but it's wild how a tile can almost seem to change colors completely just because of the colors it's next to.

Are there any books i could read in order to understand this concept better? If not, then anyone else who believe has dived into this topic really well?

Yes! There are so many great books on this subject! The most beloved is Josef Alber's "Interaction of Color". I love "Color" by Betty Edwards. An old one is Michel Eugène Chevreul’s "The Laws of Contrast of Color". "Vision and Art" by Margaret Livinstone is super interesting in terms of how our brain processes color.
