I've got a couple. In one of the diary of a wimpy kid movies there is somebody cosplaying as an au undyne. In the Gravity falls lost legends graphic novel, there is one one story in which versions of Mabel from various dimensions are shown. Though it hasn't to my knowledge been confirmed, in one panel there is what looks to be an Alphys Mable.

The webseries Eddsworld has Undertale references as well in the episode "The End (Part 1)" a temmie is shown in the background during the scene where the characters were recreating older episodes Another reference was in the episode "Saloonatics" were The Prince is shown to be talking to 2 women resembling Bratty and Catty

In the video game „Deponia Doomsday“, the villain is a talking flower named „Ronny“, he is first very helpful and nice, but later in the game, you delete his memories (because its a computer) and it becomes evil. In one part, he is talking about resets and timelines, this is a possible reference to Flowey from Undertale (i mean Ronny is very similar to Flowey in general…)

Also in Goodbye deponia, there are collectable platypus eggs which you can see more of in an almanac like format after finding it. One of the eggs, the clown platypus has a little doodle of a homestuck troll platypus, as well as a simple homestuck house symbol.

One undertale reference to note is the time that the wrestler Kenny Omega briefly dresses up as sans in front of a live audience. There was also an ABC news segment about covid where they briefly use sans' overworld theme.

There's a Undertale reference in season 2 episode 6 of The Daily Life of the Immortal King where I don't remember much of the context but I think they had to instal a virus in a software and by doing so, they had to play some sort of gamesto get through, and one of them was Undertale inspired.

Dunno if this one counts but in the first Sonic the Hedgehog Twitter Takeover, featuring the voice actors of Sonic and Robotnik, there was a question asked about whether or not they had a "bad time" with the game, to which the two of them shared their route preferences and a couple other references to the game. It's not much, but hearing the official voice of Sonic the Hedgehog saying the name "Sans" in an official media is whiplash I am truly never ready for no matter how many times I hear it. (Also I think in one of the comics, Tails has a Mettaton EX figure on his shelf?? Don't quote me on that one though)
