Also called Beggar's Chicken, wrapped with giant lotus leaves, filled with herbs and spices, covered in clay (you can make it look like a chicken) and baked. You let the guest of honor break it and the server carves and serves it. The lotus leaves give it an aromatic tea aroma and flavor and star anise gives a nice hint of licorice.

@ To me, it looks like the feet and neck have been shoved inside, along with seasonings. Chicken feet are much enjoyed in much of Asia for their cartilaginous quality. Necks, wings and backs are often used for stocks because of their high collagen content and impart chickeny richness.

Natural oven for cooking in the wild. usually use leaves in layers. which is then covered with mud. Using banana leaves will add a more delicious and fragrant aroma.

I know a guy that was sent to the Philippines to work for 6 weeks and NEVER ate ANY local food. Strictly Pizza Hut, KFC, McDonald's, Hooters, Burger King etc. They say travelling opens your mind but not if it is shut like a steel trap.
