Very pratical advice and recommended approach, and from my experience the most important is Not to Boil the Ocean. Boiling the Ocean, is a sure fire way to become overwhelmed very quickly. I'd suggest starting with the most critical of applications and mapping downward if you will, for instance borrowing from the Disaster Recovery Playbook, where business criticality has already been determined.
