But are we still just using the computer program to slide the color out ?

You can use post processing software to increase of decrease the luminance values of colors that ultimately enhances contrast in the photo.

Is there a way to make a DSLR like an a57 or a Nikon D7500 to actually take a Black & White picture? (Without relying on post-processing)
