Ive always been curious as to why taro is sold in fiji with the stalk. Admittedly, im a consumer of it, not a grower...and in Rarotonga you can buy it already, peeled raw or cooked.

If you cut out the stalk, the taro starts rotting very quickly so the stalk is there to prolong its life until bought and consumed.
