You can equate Kneipe with pub; generally, a Kneipe is unpretentious and very casual. Often the watering hole for a particular neighborhood or clientele -- generally, adults only. They won't serve food beyond potato salad, hot dogs, cold meatballs, open rolls with ham or cheese (or Mett, which is seasoned, raw pork mince with sliced onions), or some canned soups. A step up would be a "Gaststätte" -- literally, "place for guests". Still fairly commonplace and semi-casual, but may have tablecloths and are more family-friendly. Think of it as a diner with more alcohol.

Eine Kneipe in villages will serve food, too. And it has the Theke/ Tresen (the bar per se), where you sit directly at the source. The later the evening the fewer food and more drinks are served at the tables, too.

Berlin has exceptions for smoking, Bavaria doesn't. That's the reason why since I've been back in Bavaria, I've rarely been to a pub anymore, and the number of pubs keeps decreasing. First wave of shutdowns after the smoking ban, and second during the pandemic. New ones aren't coming up because of too many regulations and requirements. These days, when you open or re-open a pub, you need not only hire staff, but also a lawyer. And just because you asked: Up to this day, I never paid with any card in a pub. It's cash, and that's the way it has to be. I watched some tourists in a small pub in Regensburg once who desperately tried to pay with a card, but the pub was cash-only, so they got the advice to send someone from their group to the nearest ATM to get them some cash. There was a discussion going on in English which I didn't follow, just noticed that one guy came back with some euros in hand. The ATM was 200 meters down the road, so what?

I know the law about the equally or cheaper none alcoholic drink as "Milk Paragraph" because many (sneaky) pub owner made milk the cheap drink when the law was passed (Yes, I was around. And since a while. Older man here 😉 )

That was interesting! As I live in West Cornwall England i know all about Mead and we have local meaderies. Of course the English and Irish name 'pub' comes from the full name ' public house' but I don't know the origins of that I'm afraid!

Dear Nate, holding a card? - never. In restaurants, bars, and Kneipen they will bring the card reader to your table (if they have one; despite COVID and broader acceptance of cards, there are still a lot of watering holes that only accept cash because of the high bank fees and Germans being more likely paying cash). Conc. non-alcoholic drinks. German Kneipen are places for all ages. You can go there with your kids. I remember when I was playing handball as a teenager the whole team was invited by the coach to have a drink at a local Kneipe after games. We would discuss what went wrong and what was good in a relaxed atmosphere. CU twinmama
