Yes, you have to get some steps in before the man turns around with another egg. Then once you collect five eggs, instantly put them in you PC and repeat until the Ro Power runs out. Then hatch them all.

Your pokemon is already either shiny or not shiny as soon as you get the egg so you you can do it in both.
