Nice idea, good construction using copper. It would be nice if there was an attachment/device that cut off power to the air still when the ABV drops to say 40% so that you don't have to keep watching it. I tend to set a timer on a smart plug to switch off after say 2hr 35min and a timer on my watch for 10 or 15 mins earlier, checking the ABV as it drips out. But auto cut-off would be ideal.
