I believe your description is incorrect? At least it says something about the Story Mode, 100% Walkthrough, all Gems etc, when there's clearly none if that here

I dont think this will be fun, because the Online Mode really feels unstable. Even if I get a pretty good run, after around Floor 25 I would just be alone because everyone else either Disconnected on their own or Lost Connection somehow...

How do you unlock surprise mode?

I believe you have to beat all 3 modes once and then it gives you surprise mode
