If a user is particularly nervous, I sometimes as them to talk me through what they do as if I am their apprentice. I find that really helps loosening them up so they don't feel they are the ones being "tested"

I also like to listen to what the interviewee says and ask questions related to the details he/she has mentioned. It is interesting when you want to understand more about an unknown issue.

Absolutely. That way you let the participant lead the session and identify what's truly important to them.

Great videos and approach. One question: what do you do when your clients have very specific questions they want to get answered by the field visits? Participants will not always be able to show or tell everything they do or know because they might just not think about it during your visit. Do you still have a list of those specific questions with you or how do you handle a situation like that?

When I'm first planning my field visits, I'll do that with the team. You're right that sometimes devs have very specific questions they want answers to. When that happens, I try to get behind the dev's question so I can cover it in the field visit.
