Hi,I am learning from this as I work with food industry, would this be considered as an application of Dry heat? ,as it seems the heated liquids do not directly contact the materials to be dried? Clarification would be wonderful!

Hii, Elven Lim, there is no physical connection between the hot liquid and the materials to be dried. Either steam or hot air is used as heat source. Heat transfer occurs by conduction. Conduction: when heat flow in a body is achieved by the transfer of the momentum of individual atoms or molecules without mixing Eg. Flow of heat through a metal shell of a boiler takes place by conduction.

@@SruthisPharmaWorld hmm..So to answer my question it is in a way, a dry heat application ,like baking or broiling were the material to be heated/dried/cooked does not use water as medium to heat the foodstuff...As opposed to wet heat which are Boiling or steaming where the foodstuff does have contact to water or liquids

Just that I am keenly interested in food preparation , specifically to raw food preparation were enzyme integrity is important ,since it is sensitive to temperatures ,and seems for enzymes in general, has different heat tolerances depending on the heat type involved ,which are wet and dry heat.

Came across a food ingredient using vacuum drying method, and was unfamiliar with the process ,was adVised by the manufacturer that highest temperatures involved is in a range of 45 -50 C ,so had to determine whether or not this is dry or wet heat.

What condenser is doing

Conduction is the heat transfer mechanism here. By conduction heat is transfereed through the metal wall in to the feed. So water from the feed evaporates and this vapor enter in to the condenser. From the condensor we can remove the condensate in to a separate receiver. Thus we can dry our samples.
