For the pots of food coloring: I use them a lot and if you need a lot of coloring you can use eighth and quarter teaspoons to get a lot of the coloring out.

gel colours are not a problem when using in ganache, its when you are trying to colour just plain melted chocolate without the cream mixed in. so you probably wouldnt have had problems if yu used normal squeeze bottles of gel colour.
