I love the fact that you, unlike most youtubers, enjoy and apreciate colonial arquitecture details. In México we have soooooo many ex convents, specially in Mexico state, Morelos state, Puebla state and Tlaxcala state..most of them built around 1530-1600.. they are full of amazing details that tells us how was the process of tunrning natives to catholicism.. lots of medieval details in the arquitecture cause still renaicense had not reached "New Spain" Excuse my poor English. Greetings from México!
