I'm SO glad that I found your channel. I'm expecting my first batch of vanilla beans any day, which are Tahitian. I had many questions and between this video and the other about the type of alcohol to use, you answered nearly all my questions and have given me the confidence to start my batch. YES! I’ve been doing this for years, and the science behind it proves that splitting the beans is a superior way of making extract as opposed to leaving them whole.

last time i made extract i got my knife super sharp and cut the beans lengthwise all the way through with the knife vertical and then pulled the beans all the way in half legthwise into 2 pieces and the put each half in the alcohol. it took maybe 10 minutes to make a half gallon with 30 beans and 95% of the seeds have shaken off the bean already. im inventing a batch shaker in my head. maybe take a square meter of mattress spring and attach a plywood box to the top of the springs and it will have a foot bar sticking out of the box and all thats needed to shake 20 jars at once is stomp the foot bar a few times

what you say about the seeds not giving that much flavor is intresting. a lot of cooks and bakers will scrape out the seeds to put in the food! and a lot also toss the pods! such a waste! I will stop doing it as well and have already ordered the stuff i need to make my own extraction and will follow your guides ;)

So much miss informed information out there. Most of the time when they scrap the seeds out its for the visual effects because I can almost say everyone using the seeds in something is also adding extract!

Just got my beans today and did Exactly what you did in the video 15 oz took 2 hours to cut then added the rum Shook the bottle and it turned brown right away sure smells amazing all ready can’t wait for the end result can’t wait for next video on how do you know when your extract is ready thanks again

I just started this series in December. So I am in the processes of making Vanilla extract as we speak. I am at the 6 week mark now and will be showing my next steps in a part 3 video hopefully in a few days from now. When I finish making the extract I will show how I dehydrate and dry the bean pods then go into how to make powder and vanilla sugar making the most out of your beans pods as possible. So this is a process in motion right now. Thank you for your comments

Great info. Because of this video I went & pulled out my beans because I just started about a month ago so I had 4 quart jars I had started this new hobby with so it took me a couple of hours to split the 16 ounces of bean & scrape the caviar into the jars but it’s done & im more satisfied because I believe your testing and now knowing I don’t have to wait a year! Thank you!!! ❤

Thanks so much for sharing your knowledge and being so transparent about your methods! I've got about 11 bottles of extract going right now (the oldest one is 6 months) and they're all whole beans. I'm really eager to learn about your process! The only reason why I've left them whole is because I use the bean "caviar" (haha, sorry, I know you dislike that term) in my cookies (for the look), along with extract (for the actual flavour) and I want to be able to pull a bean from the jar and use the seeds whenever I need to. Except if I did it the way you mentioned, I'd have to wait until the extract is done to get the seeds, correct? I know people mention making a vanilla bean paste, but apparently they are breeding grounds for bacteria, and that's not something I wanna mess with. I guess what I want to know is, what would be the best way to have a constant supply of vanilla bean seeds whenever you need them, if you're making extract?

Ok you just made me laugh. Caviar! You can still get the seeds out when you do it with the split method its just the seeds are at the bottom of the jar. You can reach down with a milk shake spoon and scoop some up with and use them any time. But here is the thing if you want to be consistent with making you extract do use any until your extract is done plus if your trying to stay with in FDA standards you have just altered that bean and removed ingredients considered the whole bean. Patients is hard to do when making something so good but I will always say wait until it is finished before altering or removing anything.. When your done you can remove all the seeds and put them in a smaller jar and either top it off with extract or fresh alcohol then just pull from there when needed. The alcohol with keep out the bacteria. When people are making paste they are either lowering that alcohol content enough it cant protect it any more or they are adding things to it like sugars that will actually start fermenting in long term storage. I hope this answered your question.

VERY true - I didn't really consider this. Thanks for the advice! Perhaps, just in the meantime, I'll just keep using my Nielsen-Massey paste until some of my extract is done, then I can dehydrate those beans and turn them into powder and use them, or just do what you said and stick the bean sediment in a jar topped off with finished extract when they are finished. Great idea!

Vanilla paste sounds good to me,,,,, over the other . I like letting the used beans dry ( letting the alcohol evaporate ) then putting in a dehydrator as low as it will go until it is very , very dry then grind to power & add to everything that needs it.GOD BLESS

Love your channel bro. I’ve learned a lot from you about making vanilla. You would have made a great teacher! I have been making vanilla for a couple years and kind of excited to try something new. Bicardi came out with a limited flavor called Banana Rum (discontinued) but have used mostly coconut rum so went out and bought the last 4 1/2 gallons of banana rum. Hoping for a nice double fold with a tint of banana at the end. Will let you know how it taste in 3 months.

I just subscribed to you yesterday. I'm a newbie. After watching how you process your vanilla. I took my pods out of the little bottles I had put them in around September. I processed them just like you did. I had way too much vodka. I had 2.25 oz of tahitian beans. And 4 cups of vodka. I re poured them into a half gallon jar with the vodka that I took them out of. I am expecting 3oz Madagascar beans next week and will be mixing them. I will be adding 3 cups of Vodka to it. Does it matter if your start with vodka and refill with the rum?

So lets talk about Your first batch of beans @ 2.25oz and 4 cups of vodka. You have about 1.75 cups to much fluid per bean ratio. To stay at the minimum ratio to make vanilla extract under FDA standards is 1oz of vanilla beans to 1 cup of 70 proof of drinking alcohol. Here is what I will recommend to you sense you have 3 more oz of beans coming. Option -1 With your new beans is weight out 1 3/4 oz of the beans and add them to your exciting 2.25oz and 4 cup fluid batch and this will give you at least the minimum and will give you a nice full flavored vanilla extract. This will leave you with 1.25oz of new beans and you can start a new batch with them and just add 1 1/4 cups of alcohol. this will give 2 batches of vanilla and the standard ratios and will make a good extract. Option -2 This is what I would do. I would take the new beans coming in and just add them to your current batch and Only adding 1 cup of alcohol to this batch. This will give basically the same thing as option one but in one batch. This will give you 5.25oz of beans to 5 total cups of alcohol. So there is some options for you. Let me know how it goes. Since I just found your slice/scrap method... would it be beneficial to take my beans back out of my "brewing" extract and put them all back in?¿? (I have used 1oz bean to 8oz spirit ratio & 12 month shake-n-wait method) Maybe someday I can get a vacuum sealer 🙃

I would pull them out and cut them in half and put them back in the jar. I would shake them every couple of days for a couple of weeks. This will help out for sure.

Well the term mother jar I have only seen been used in the last year for vanilla making and should not be used. It just confusing to people trying to learn how to make things from home . Mother jars usually have a living organisms in them like Vinegars, kombucha and yeast starters that are actually have what they call “mother” in them that can be used to start new jars. Vanilla mother jars have no living properties like that so it confuses people. I see so many different ideas behind the Vanilla mother jar it confuses me. I have seen people using beans form an old extract to start their mother jars and keep adding beans from other extracts to them. If your making a real finished Vanilla extract the vanilla beans are spent and will not give off that much flavor. Many people are saying they are making 2 -3 batch’s of extract from their original beans. Vanilla bean are not the ever lasting beans and if you making a good extract your beans are 90-99% spent in the first batch. For me its a waste of time. I hope to address some of this in my next video.

Oh yeah cloudiness is perfectly normal. This is the difference from home made to store bought. you are getting real pure vanilla extract. If you dont split them the fluid is clearer but it take so much longer to make and the extract is not as good in my opinion. Store bought usually use some type of filtering system to hold back the particles in them.

Hi! I've made my vanilla back on Jan. 15 following your guidelines. It is a beautiful rich dark brown. Almost every day now, I shake it good, then place the jar back into the cupboard. Or, if the sun is shining, I put my jars in the window till sunset. They are nicely warmed up when they go back into the cupboard. Anyways, I have a few questions. I'm in Ontario, Canada and could not find any Cpt Morgan's Coconut rum at my LCBO, so I bought Bacardi Coconut Rum. Is this okay? I have two 1-litre jars of vanilla brewing - one with the Bacardi Coconut and one in vodka. (For experimenting.) The jar of Bacardi Coconut seems a bit thicker, almost very slightly syrupy. Is that normal? It smells 1000 times better than the vodka jar, by the way! Also, when slicing my beans, the halves were taller than my jar so I cut each half been into two pieces. That was okay, too? One last question - I don't have the vacuum sealer. Will this make much of a difference? Thanks so much for all the help and guidance you give us! You are much appreciated! (I have another order of beans arriving any day now. I am definitely going for the coconut rum for the whole batch this time. Even though it still needs brewing time, sometimes I put some on my wrists - the coconut vanilla makes an incredible perfume. lol) Thanks again.

Yes your alcohol choices will work just fine. Any drinking Alcohol 70 proof or higher will work. So with rums your fluid will be a little thicker and I believe because they are sugar based when made. This is normal and perfectly fine. As far as cutting them you are fine. If you look at my part 3 video you will see I chop them after 6 weeks. Vacuum sealing them makes a big difference in the time frame. It shortens the time frame by a few months depending on how much you shake the jars per day. I get finished extract in 4 months. I have new video coming out possibly next week showing my finished extract. I hope this helps

It does not exist like some thinks it does. All they are doing is diluting what they have. The whole idea for extracts is to have a concentrated flavor packed in to as little fluid as possible. Recipes are fluid sensitive and why we have extracts. When you make a good finished extract the vanilla beans do not give off any more oils or flavor no matter how long you age it. The concentration of the fluid with a finished extract is so strong if you take some out and then top it off with fresh alcohol you cant tell the difference and think it is the same. But when your baking with it you will start to notice the difference in less flavor. Cookies, cakes, and ice creams are suddenly not a flavorful or people are wondering why the extract is has a much strong alcohol bite to it and this why.

how do i store the seeds from vanilla pod? Not the whole bean or used bean just the little black seeds i cant seem to find how to store them and do they have to be refrigerated? Thank you

moisture and air cause mold to grow so you have to eliminate both. The best way in my opinion to save anything fresh vanilla is to put it in a small jar and just put enough alcohol 70 proof or higher to cover whats in the jar. this should keep your vanilla beans or seeds from molding. Then you can keep in the cupboard or counter top.

If you store your beans in alcohol until you are ready to use them what do you do? Do you let the beans dry out or just take the out of the alcohol and start splitting them while they are still wet or what?

I take the beans out and just let them drip off a little bit and then get them ready for the jar. The fluid that was left in the jar I split up between the batches I am making. Example: If i had enough vanilla beans in the stored jar to make 2 batches of vanilla extract. After I removed the stored beans and there was 1 cup of fluid left i would split that up in to the two new batches of vanilla beans used when stored. so I would put a 1/2 cup in each new batch. When your storing beans in the alcohol they are extracting a little bit. So to make it even just split the fluid up evenly between the batches your making. Just make sure to count it as part as your recipe. I hope this all makes sense.

No I have not tried the pressure cooker method. I don't think I ever will only because pressure cooking is a high heat method. I do believe to much heat can over do somethings. It would be interesting to do a controlled test side by side with pressure cooking method Vs low heat or vs traditional methods.

A question for you, I am going to do the bulk of my extracting with Madagascar beans but do you use Grade A or Grade B beans? I was told the Grade B beans are dryer & doesn’t have the same amount of oil as the Grade A? Thanks in advance for the reply ❤

I have learned a lot over the years and there is no standard raking for how the vanilla beans are graded. The sellers have fee will on grading the vanilla beans so it is a crap shot to what you get. Grade B beans use to be much cheaper like $2 to $4 cheap per oz over the grade A's. But now they are the same price so I always buy grade A's.

Can you explain to me why my local health store is selling 1, yes one organic vanilla bean for $13 to $21. No bigger than 4 to 5". One was in a vacuum tube. One was vacuum sealed in a box and I think it was just bits for $21.

Yes people are trying to make money off of you. If you dont know about buying vanilla from a distributor then most people only think they come from your local stores. This were they make their money. Most of the time they are only caring grade B vanilla because the water content is much lower and has a longer shelf life. The packaging is all about marketing and making money. I have purchased vanilla from many different companies over the years and now only buy from one. Vanilla bean kings have been supper consistent and excellent customer service. If your going to use all 3 ounces to make a double fold then you need 20 ounces of alcohol. I personally dont make double folds unless you have a use for it. Most people wastes it not knowing how to use it thinking its just like the standard single fold.

What happens if you put way more vanilla beans than the recipe? It’s been about a week now and I wanted a strong extract so I used 20 pods for 1 bottle of Tito’s. It already tastes and smells like a great extract but will it become too overwhelming?

Hey Ryan! So when I talk about vanilla and recipes I always fall back to FDA standards. This way everything stays constant and easier to duplicate later on. There are so many people giving out conflicting recipes it is causing confusion. So I always recommend weighing your vanilla bean pods before starting. The standard recipe is 1oz of vanilla beans to 8oz of 70 proof or greater alcohol. 20 vanilla beans weigh differently depending on the growers, type of beans and oil and moister content. Grade B vanilla beans are much lighter and roughly 10 beans per oz. Grade A vanilla beans are roughly 6 beans per oz. Look at your bottle and see if it is the 750ml size! If it is your probably safe keeping to the ratio of 1oz. to 8 oz of alcohol. 750ml is roughly 3 cups and you would need 3 oz of vanilla beans to make a single fold. Ok now to your question Yes you can always add more vanilla beans to make it stronger. I don't think there is such a thing about overwhelming when it comes to vanilla. So a single fold is recipe is like I mentioned above 1oz. beans to 8oz of alcohol. a double fold is 2oz. of vanilla beans per 8oz. of alcohol a triple fold is 3 oz. of beans to 8 oz of alcohol. So your increasing the vanilla beans but not the alcohol to make a stronger extract. I hope this helps. Hi. I’m unclear what you do with the seeds after straining. Do you put them back in your individual jars or new batch in process? Thank you.

I split them up between the individual bottles. It is for decoration as the seeds have no flavor value.

I have really enjoyed your videos and since watching went and purchased the attachment for our vacuum sealer that should arrive today 😀. Wish I would have seen this method you use before I started my first batches last week. In any event, I plan on sealing them tonight using it. Even if they are already in process, I don't think it will hurt. I also didn't split my beans the way you do....only split down the middle and not in 1/2 and didn't scrape. More beans on the way and next batch I will split as you do. Thanks again for sharing your process and good luck with your circulation method, it's way cool!!!!

Great video. You said you have used extract grade beans but I've noticed you seem to use grade A beans in your video, did you think you got an inferior product from extract grade?

Yes I usually use Grade B vanilla beans because of the pricing. They are usually $2-3 dollars cheaper per oz and make the same extract as Grade A's. But now there is almost no price difference between the two so I just get grade A's. They have a higher moisture content so they extract a little faster.

You can never go wrong with the Madagascar grade A's vanilla beans. I only use those beans because to the untrained nose and mouth most people cant tell a difference when using others vanillas in cooking. It will be interesting for sure with the blind testing. No matter what the out come is I will still use the Madagascar.

I have a couple questions. I’m planning retirement in the Philippines. I have about 30 coconut palms and 50 bananas. Vanilla and black pepper seem like the best choice for intercropping. Other than making my extract where do you go to sell your crop. What am I looking for?

I sell my stuff all to friends, family and local farmers markets. I am usually sold out before I have to go to the farmers market. This is a good thing. It is all about marketing and telling a story about your shelf and products. Stories sell products and you need to be different then everyone else in the same category. Example: I sell honey also and when you look at all the honey bottles on the shelf they all pretty much look the same with yellow background some sort of image of a bee or flowers. I went old school with my labels because I like the old medicine bottles and heritage fonts. So my honey bottle labels are black with white outlines and lettering. Then my image is our family logo or a steer head. No bees or flowers. I always get compliments on all my labeling and people love it is different and draws their eyes to it. Even my KZbin is part of my story. I hope this helps.

Thanks. I aprémiate you videos and the input. I’m retiring to the Philippines if all works well. Honey is faked in the PI. The government wants the red light streets to turn into gourmet restaurant destinations. So as Vanilla is second in spice money world wide, I think that local sales of extract to confectioners may be a good choice. I intend to put stingless and honey bees on my orchards as well as grow vanilla as a intercrop. I am of the opinion that sales to local shops or online bean sales will be the beginning until I can find the exporters and produce copious quantities of the vanilla. Honey should sell ok. The pollination services should be of greater economic productivity. Avocados produce 3x plus with stingless colonies within 200 meters. Coconuts produce 40% increase with both bees present. I’m not sure on rice and corn or other fruits.

After your extract is ready and you put it in small bottles, do you repurpose the spent pods into powder or? I know you use some for ascetic purposes in the small jars, but what about the rest?

Yes when I am finished I will bottle into smaller bottles and will use the lefter over beans or powder. It will be in all the upcoming videos.

I shop around between facebook group called Vanilla bean co op, and if you google vanilla beans you will find a few different sellers in the states. You just have to be careful because not everyone is the same and you might get junk beans. It is a hit and miss basically with all the companies. The FB group seems to be really consistent in quality its just a long wait time.
