Vanilla Butter Cake, Swiss Meringue Buttercream

The vanilla butter cream cake recipe (all ingredients are at room temperature)
* The vanilla butter cake (16cm pan x 3 slices)
180ml milk
1 tbsp lemon juice / vinegar
270g cake flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
150g unsalted butter
30ml oil
130g sugar
Cream the butter, oil and sugar until pale and fluffy
3 eggs, add one by one
1 tbsp vanilla extract
divide the batter into 3 pans (buttered and floured), bake the cakes at 170C for 30 - 35 minutes
* The Swiss meringue buttercream
3 egg whites
140g powdered sugar
a pinch of salt (I forgot to show in the video)
300g room temperature butter
1 tbsp vanilla extract
a little purple color
Sugar syrup: 100ml water, 30g sugar, mix to dissolve
Sprinkles for decoration

Yea you could , and cake flour is basically all purpose flour mixed with corn starch

Just made the cake only and it was moist! It was a bit gritty but not sure if it was because I didn’t mix well. Wasn’t too sweet and it’ll be perfect with frosting

This is a great recipe, right in the time i was looking for it, and not excessively sweet thankfully! Which is great. Also, by the way i wanted to know what makes butter cake batter Sometimes be runny or lumpy, curdled or turning out into a tough greacy mess once baked and smells like egg despite using the same measurements each time, I've been really wondering what makes it turn out amazingly delicious, fluffy and perfect at times then completely fail at other times... I suspect it's the temperature of the ingredients. I noticed that I get the best results with it when the batter's texture is quite thick and that I need to spread it across the pan like in this video, but when the batter turns out too light and liquidy despite that it's the same recipe I already can tell that it's screwed which confuses me and I don't know what causes that texture diffrence, anyways if anyone has any tips, experience or explanation to this please share it it'll be appreciated 🙂

Hi, I guess you over mix your batter sometimes. If you over mix the egg yolks batter in egg whites, it would be breaking the foam, which usually leads to runny batter.

Great video, but i have a question about the recipe if you don't mind answering, Sometimes butter cake contains greacy chunks in the inside, making it uneven plus with a thick crumb, it turns out oily despite the batter being well mixed and the temperatures alright & didn't curdle 🤔 could you please clarify what might contribute to that. I added lemon zest could it be the reason why it had small but hard greace chunks all over? 😊
