When you cook the pastry cream, after the milk and eggs have been combined. But gelatin shouldn't really be necessary.

@@spekkoekhuis Hi ! Sorry for the late reply. Bloomed gelatin can be added after the eggs have been tempered, while the mixture is still hot. But the mixture will thicken when heated, so gelatin isn’t really necessary😀

What did you add to the 1/4 cup of cream before you whipped it to fold into the pastry cream to make diplomat cream? Was it cream of tartar?
