how do we arrive at "yp = u1(x) y1 + u2(x) y2"? I understand that changing the homogeneous solutions' parameters to functions always provides a non-homogeneous solution, but can it be proved that there are no other possible solutions?

It’s basically a good guess. I’m not aware of a direct proof that there’s no other solutions.
