The Maamoul recipe is a very old Egyptian recipe, it dates back to the Faraohs era, and they used to prepare the maamoul as round filled cookies. The round shape was devised for their God of Sun, Amun. To make round Maamoul, one needs a special mold made from wood, but the recipe is a bit more difficult that the one that Majkl is going to show you in this video. The Maamoul in a baking pan is much easier to make.
Dough for a 30x24cm baking pan:
350g fine semolina
175g powdered sugar
200g melted butter
125 ml warm milk (45 Celsius)
10g fresh yeast
Flavor: You can add your favorite flavors, it is really upto you.
A European version would be to use 2 tablespoons of vanilla extract
In Egypt, they use 2 tablespoons of distilled rose water and 1/2 teaspoon of orange blossom water.
Make sure that the texture of the dough is as shown in the video. Add milk to make it a bit more smooth, or add a bit of semolina to make the dough more dry.
Filling:
300g ground wallnuts
Majkl likes to add 80g of roughly crushed pistachios
400g sugar
4 tablespoons of honey or sirup
Flavor: Either add 2 tablespoons of vanilla extract OR
add 4 tablespoons of distilled rose water and 1 teaspoon of orange blossom water.
Make sure that the texture of the filling is as shown in the video. Add honey to achieve the correct texture.
