that looks delicious. my family makes it slightly unorthodox by using ground meat, and we add fried potatoes in it as well. i look forward to trying your recipe!

In Germany we call it "Gulasch". It's prepared very similarly. We add more onion (same amount as for meat) and Paprika. But we cook it in a big pan to get more roasted aromas. This recipe originally comes from Hungary. Dear Yousef, thank you very much for sharing all your amazing recipes❤We love you

Not really. There's dozens, if not more, beef stews like this. Paprika defines gulasch. As this doesn't have paprika, it's not really gulasch, other than it's a beef stew. You may as well say Texas chili is gulasch because it's also made with cubes of meat, sometimes with onions (though very often just garlic), and made with powdered red chiles. The history of this dish does not seem to involve Hungary if you dig into it. This dish is often (perhaps even usually) made with ground/minced meat, which Hungarian gulasch is not.

Right, every culture has its own meat cube recipe and every single one is amazing, delicious. The wonderful thing is we all meet here, talk about it😊The Chili Queens brought a fantastic recipe to San Antonio. My Dad's family is american-german. They added Sauerkraut, potato cubes and sometimes even pineapple to the Texas Chili. ☺️Try it and tell me your opinion

Thank you Yousef, for this suggestion. I don't have that clay pot so I suppose I have to use another pot that can be used on electric stove. Looks very good and rather easy to make, but I would maybe make that alternative with part of the meat being lamb liver.

Have always watched your videos and I fell in love with Persian food. It's just so hearty and comforting. I like how Persian cuisine is not so heavy on spices but it's still flavourful and delicious! I've made some of your rice and meat recipes for my kids too and they loved it. Appreciate that you're still sharing your passion and knowledge with the whole world 😊

Thank you, but if I may add my 2 cents: I am aware of the myth that Vavishka was brought to Gilan by Russian occupiers. However, the word "вавишка" (vavishka) does not have a direct or common meaning in Russian. Interestingly, the pronunciation commonly used in Gilan is Vavishke, with its root derived from the word vavishtan, meaning "stirring" in Persian or Gilaki. So the name is most likely Gilaki not Russian. Despite the dish's incredible flavor, its recipe is remarkably simple, consisting of small pieces of meat stir-fried with chopped onion, salt, and spices, with the possible later addition of tomatoes. This simplicity suggests that the concept of such a dish could have emerged spontaneously in various culinary traditions, as stir-frying basic ingredients is a universal cooking technique.

Tatar azu use mostly game (venizon, elk, bear, rabbit, wild boar) meat, reason pickles are aded to ease game taste 🎉

My friend, you need to change your cutting board. The one you have is huge and got furrows/grooves at all edge to catch the possible juices. you don't need that. instead, it traps your cut vegetables when you try to get them offf into your pan. it is very unwieldy.

Most Persian food was influenced by other Europeans. Research. Cabbage Dolmeh some European countries have it. Persian Empire was very big all the way in Europe as well.

I can see why would someone use liver. Liver pairs very well with the onion and if not overcooked it very much could go well with this tomato/onion base.

My father was from Vienna, he called this guyas. In out house we did not add tomato but a lot of paprika. So good. Your rice is beautiful.

I can picture this being slow cooked on top of a Samovar somewhere in the distant provincies of Russia. The Czar would be proud to have it! Thanks for sharing.🦋

Samovar is too small of a heat source to cook meat dishes on it. Samovar has a heat source at the bottom which heats the water in its tank and steam comes up its narrow chimney to warm up the teapot and brew the tea.

You should try indian 'mutton/ beef korma'. It has more aromatics, more spices used.
