Vegan Birthday Cake Ideas!

Hey! Here’s a new video featuring 3 easy and delicious vegan cakes! It’s not my birthday or anything I just really wanted cake last week so here you go.

INGREDIENTS
#1 Strawberry Mole Cake
2 ½ cups all purpose flour (310g)
5 1/2 tbsp cocoa, unsweetened
1 ½ tsp baking powder
1 tsp baking soda
¼ tsp salt
1 cup sugar, raw (250g)
1 flax egg (1 tbsp flax seeds + 3 tbsp water, letting that sit for 10+ minutes)
1 tbsp apple cider vinegar
1 cup non dairy milk (250ml)
¼ cup water (60ml)
⅓ cup melted vegan butter (80ml) +more for greasing
1 tsp vanilla
for the cream:
1 ½ cups vegan cream (350-400ml)
1 tbsp agar agar
¼ cup finely chopped vegan chocolate (~ 50g)
2-3 bananas or 2 handfuls of fresh strawberries
→ cut in half lengthwise
#2 Cherry Crumble Bars
cherries:
400 - 500g cherries, frozen or from the jar (2 1/2 - 3 cups)
1 tsp cornstarch + 2 tbsp water
2 tbsp raw sugar or other sweetener
crumbles:
1 cup flour (125g)
a generous pinch of salt
3 1/2 tbsp raw sugar
2 tbsp non dairy milk
¼ cup melted vegan butter (60ml)
cake:
1 cup all purpose flour (125g)
1 tsp baking powder
a pinch of salt
1 flax egg (1 tbsp flax seeds + 3 tbsp water)
1 tbsp apple cider vinegar
¼ cup vegan butter, melted (60ml)
⅓ cup raw sugar (80g)
1 tsp vanilla
½ cup non dairy milk (125ml)
*serve with vegan yogurt, or ice cream
#3 Vanilla Cashew Cream Sprinkles Cake
2 ½ cups all purpose flour (310g)
1 ½ tsp baking powder
1 tsp baking powder
¼ tsp salt
1 chia egg (1 tbsp chia seeds + 3 tbsp water)
¾ cup raw sugar (190g)
1 tbsp apple cider vinegar
1 ¼ cup non dairy milk (310ml)
⅓ cup vegan butter, melted (80g) + more for greasing
⅓ cup sprinkles (~ 60g) + more for the top
Cashew Cream:
1 cup cashews, soaked in water overnight
3 tbsp vegan yogurt
a generous pinch of salt
2 tbsp lemon juice
3 tbsp raw sugar
or yogurt free version:
1 cup cashews, soaked in water overnight
¼ cup non dairy milk (60ml)
a generous pinch of salt
2 tbsp lemon juice
a handful of soft dates

WOW! The chocolate strawberry cream cake! I have FOUR vegan kids and my oldest just had a bday this week. He wanted a vanilla funfetti cake so we just did plain vanilla vegan cake and shook in some sprinkles! For my identical twins bday we bought a boxed chocolate cake mix and used aquafaba in place of the eggs and added fresh raspberries! It was so beyond!

Giiiirl, you are killing me! I didn't even start the recipes yet and already liked! They look bomb af 😍 Imma bake everyone a birthday cake from now on, even if its not their birthday, because who can be mad at someone giving them cake, right?! Edit: For the first cake: I remember my grandma drizzling the base of the cake w some kind of sirup, sometimes orange, sometimes something alcoholic. It was heaven! Also: You could use a Vegan 'buttercream' its basically pudding whipped up with vegan butter. If you add just enough butter to make the pudding fluffy, you are good! Will definitely hold its shape!

In Finland is whipping alpro soya cream. I like it. And once I made vegan Oreo cheesecake. The base was oreos and melted vegan butter. The filling was 2 packs of alpro whipping soya cream and lots of melted dark chocolate😍

Instead of the vegan cream you could use cashew cream, it is more healthy. There are a lot of recipes for cashew cream on KZbin ☺️
