@@rachelembletonpalmer5891 Traditionally, it's made from oatmeal and suet, with a strong mix of onion, herbs and spice. Sometimes a fatty cut of pork (shoulder) is a substitute for beef suet. I really want to make some now, I even got "still good" mushrooms on clearance yesterday After finishing our degree, my partner and I went on a trip through west Europe and hiked the west highland way. This was the first time I ever hiked for more than a day with a quarter of my weight on my back and about five days in, after getting thoroughly soaked the day before, some scouts caught up to us and we had to sleep outside for the first time. We were at a youth hostel and the front lady asked us if we would like the full Scottish breakfast and to stay in the common room if it rained too much. We didn't think they would have a vegan option, but they had haggis made from mushrooms and that morning was a real turning point. The meal was great, we did our first munroe and from then on, we only slept in hostels when there was no legal campground.. We also found that some Linda McCartney sausages were really good, but I can't remember the name anymore and since we can't get them here in Germany, I've never been able to fully replicate the meal

I love Black pudding but the variant we do here in latin america is pigs blood and a lotof fat so if i try this i can eat my pudding every day without the risk of geting a stroke at 30 so vegan puding every day and pig pudding on the weekends

I wonder if adding some high iron content vegetables or leafy vegetables really puréed up might add a bit more of a black pudding taste? They may even make it appear a bit more darker but may stray into making it look a bit green I suppose, so the recipe might need something added to counteract that effect.

For a meaty flavoring make fudge but replace chocolate powder with garlic powder and the water with vinegar I know it sounds awful but it's savory caramel and sour and it oddly can work.

It's interesting that you say so, because I have at several times in the past been eating fudge and thought it tasted oddly like blood.

I just recently learned that brown sauce is sold in the States as steak sauce. Clears up a lot of confusion for me.

It's similar but not the same. Just the closest you'll be able to find.
