This use to be my birthday dinner every year until I went vegan 10 years ago. I'm very excited to try this. We used to rub the pot with a cut side down of garlic to give it a light garlicy flavor. Thank you Miyoko for bringing back one of my favorite meals!🥰❤️

Fondue is amazing. Back in the day, when I was vegetarian (now vegan for 3 decades), we used to have fondue parties. I bought a fondue pot just like yours in 1986. We'd have cheese fondue for the first course with veges and cubed stale bread and then for dessert we'd have chocolate fondue with strawberries, bananas and cubed tea cake. Fun times!

We used non-alcoholic wine at a retreat center when I was a chef there because it was an alcohol free place. Unless groups broke the rules and snuck it in. (Which they did on several occasions and it really bothered all of us because the vibe of the place changed so much.)

I might try to make something like this with tofu since cashews are kinda expensive and some people in my family are allergic. Looks really nice. I don't have a lot of cheese options where I live.

It has to be dry white wine. And for anybody who's worried about the alcohol content, it cooks out because of the heat.

@@lrhurst3033 I used Pinot Grigio cause I had it on hand. I don't think of it as a very sweet white wine but in this case the end product was way too sweet for my tastes.

I just wish there were more "cheesy" recipes that don't use cashews. Being allergic to all kinds of nuts means finding a complete alternative. I was excited at the idea of vegan fondue. My heart sank at the sight of the cashews. 😢

Use sunflower seeds if you're not allergic to them. I avoid cashews for human rights abuse reasons, and there are few things where you can't use sunflower seeds instead with equal results

Could you substitute cashews for blended silken tofu? Might need to play with the flavours and texture but blending silken does give a lovely creamy sauce, as long as you don’t have a soy allergy!
