is good to let them sit once dredged before putting it in the oil like on a rack or something for a few minutes. Helps keep excess flour from falling off in the oil which can burn and make lots of smoke and can make the last batch covered in burnt flour bits. A piece of good advice I just learned this too. Anyway I made vegan chicken waffles about a month ago from the heart very similar to this I really like the videos :)
