INGREDIENTS:
Batter:
- 1 cup (100 g) unsweetened cocoa powder
- 2 cups (300 g) all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups (400 g) sugar (any sugar works)
- 2 cups (500 mL) boiling water
- 1/2 cup (125 mL) vegetable oil (any type, including melted coconut oil)
- 1 tablespoon vinegar
- 2 teaspoons instant coffee
- 1/4 cup plant-based milk
Filling:
- 1 1/2 cups vegan margarine (285g)
- 1 1/3 cups (130 g) cocoa powder
- 6 cups (725 g) powdered sugar
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
- 50ml plant-based milk
Ganache:
- 100g 70% dark chocolate
- 100g coconut cream (the solid part of coconut milk)
