Vegan dish---Vermicilli upma

This is a dish that can be served for breakfast, lunch or dinner. Or it can be a side dish to any meal.
Ingredients:
2 c Roasted vermicelli noodles
1 1/2 tbs oil(any kind)
1 tsp mustard seeds
1 stem curry leaf
1 carrot thinly sliced
3-4 green beans, sliced
1 smalll onion, sliced
2 green chilis, sliced
handful of cashews, if desired
1/2 c grated coconut
Boil salted water, add the roasted noodles and drain after boiling for 3 mins. Set aside.
In a pan, add oil, then mustard seeds. Let the seeds pop, then add curry leaf, vegetables, onion, green chilis and salt. Cover and cook on low til vegetables are half way tender. Add cashews and stir. Cook and cover til vegetables are tender. Uncover and add noodles. Stir and add grated coconut. Mix to combine. Your vermicelli upma is ready!
