MYSTERY OF THE ICE CREAM SANDWICH (this was our theory btw, not proven fact but we're pretty sure we got it right lol): They had about 8 cookies left, each cookie selling at £2.50 or something around there Plus a scoop of ice cream was an extra £1, so it would cost about £3.50 for a cookie with ice cream scoop. The ice cream cookies, which contain 2 cookies + ice cream, were priced at £3.50 or £4. So they will make more money off selling cookies and ice cream separately than selling the ice cream sandwiches - so since they only had about 8 cookies left, they were just trying to make the most out of what they had left. MYSTERY SOLVED. lol.

I think the issue with the cookie sandwich is that the ice cream has to be a bit soft to be put between the cookies, and then the sandwiches are put back into the freezer so the ice cream can harden up. The regular ice cream is kept at a cool enough temperature that it would probably break the cookies when trying to do the "sandwiching" maneuver... xD

the pad thai wasn't at a vegan stall, but the thai stall - they had a vegetarian pad thai and I asked for without egg!! and the ice cream sandwich...
