I recently learned a hack in Madeleine Olivia's video about fresh ginger: All you need to do is pop it in the freezer, it lasts forever and you can take it out and grate it immediately without having to thaw it or anything, it really does work!

I do the same thing, you can even cut it into smaller pieces before freezing, I wrap them seperately, and add a whole piece if you need to.

Best hack i've found is to freeze fresh ginger no peeling or anything its so much easier to grade to when its frozen. It keeps so much better no sad moldy dried up ginger anymore like i use to have.

If it's possible to burn the garlic, I will.... so now when doing any stir- fry type thing, I do the garlic/ ginger first, giving it full attention, and put it aside (in a bowl, or use a separate small pan for it). Then you can get the other veg browned then cooked through, and only add the garlic when there's no chance of burning it.

Hi Rose, I made Congee! It came out great I absolutely loved it! My mom is Filipino. Growing up she mad a porridge similar to this but with chicken. I’ve missed having this porridge. Now I can make my own Vegan style. Ty!🥰

Rose thank you! That congee looks so good, I've never had it before but now I want to try. A fresh ginger trick you might like is to keep it in the freezer and then grate it with a microplane when you want to use it BOOM fresh ginger always! I do the same thing with fresh lemongrass

Hey Rose, A great tip! Put your fresh ginger, don't peel it, put in in a good plastic zip bag and in to the freezer and viola You have fresh ginger always and just use a micro plane to grate into what ever recipe you want, I don't worry about peeling mine at all, but you can take a piece out and scrape it lightly to remove the peeling if you like, I started doing this years ago and now I always have fresh ginger 😋 oh and in your humus try adding a bit of black pepper and cumin, Soo good 👍oh just a nice thought for your kale and broccoli pasta, top with a good serving of nutritional yeast so yummy!

But every source i've looked into said that we should be oil free for maximum weight loss. So for those who are really struggling, maybe omit it and use veggie broth like i did? It all looks delicious, but all that oil doesn't sound very weight loss friendly to me.....

I am transitioning to a more vegan diet, so 80% of my meals will be vegan. I might be plant based except for pasture raised eggs, not sure. But that sounds like a good place to start.

Congrats! I started that same way 5 years ago and found my gut and digestion feeling much better and then eventually jumped full in, except for the rare cheat meal once or twice a year. Hope this goes smoothly for you, definitely takes time!
