Yaaaaaas. I have put furikake on avocado toast ever since I studied abroad. A few stores like Trader Joe’s sell a premade vegan one called “nori-Komi” (“packed with seaweed”) 🙂

I love to take soy curls, and after their rehydrated, toss them with Sriracha, nutritional yeast, and coconut amino! Then I sear them in avocado oil! They’re delicious!

I make a mixture that was inspired by recipes for furikake. I toast sesame seeds and kalonji seeds. I mix them with Aleppo pepper and seaweed flakes. Definitely not authentic but it is great on all sorts of dishes.

I would love to know the recipes for the other soy curl salads you mentioned. I just received my 1st bag ever of soy curls from amazon yesterday. And I'm brand new to eating vegan so the more recipes the better.. I am gluten free low carb

These days I don't track. But generally 50-60g net carbs from non-starchy vegetables and tofu. For some reason, if it's from non starchy veg, somewhat higher carb counts don't kick me out of ketosis. If there is any starchy vegetables or grains in the mix, I have to be careful to keep it lower than that.

So to do vegan keto (or actually this is more low carb than strict keto, I think?), you have to eat a lot of soy tofu? Because almost all other protein sources are too high carb? For me both tofu and avokado - and also tomatoes - give me a histamin reaction and a horrible rash if I eat more than just a little. I am kind of envious on people who can actually live well on this kind of diet. I for sure can't.

This is keto in the sense that the carb count is low enough to keep me (and other fat-adapted vegan keto'ers) in ketosis. I do eat a lot of soy tofu. But I also make tofu out of other legumes/seeds/nuts too. That's how the "will it tofu" series started on this channel. Don't be envious. I wouldn't do it if I didn't have to! lol

Second what Mary said, and I'd like to add that protein doesn't have to come from the main dish only. As an Asian, I'm used to having multiple-dish meals. I've discovered that by sneaking proteins in side dishes, salad and soup, I feel fuller for longer.

It depends on why you're doing keto. For medical keto diets, it's essential to have a specific fat/protein/carb ratio. For people who are not fat adapted yet, it's usually helpful to have more fat for satiety. And for those who don't have enough body fat, more fat is also helpful so they don't experience unwanted weight loss. For me, who has enough body fat, I don't need to add more fat. It's more about keeping net carbs down so I can stay in ketosis which helps to keep my tendonitis away.
