I watched your video this morning and started cooking in the crockpot this afternoon and ate it tonight. I didn't use thyme, kale or yellow lentils. I increased the amount of garlic, onion and red lentils and used a diced red bell pepper, but I did everything else the same and it turned out great. I have plenty for the week and even froze some of it. Ty!

Very delicious love the ingredients I too make it the only thing I don't mash the food I just let it cook on low heat also since we use pure olive oil when I serve the food I drizzle with olive oil we get all the flavor and taste and vitamins

I use all types of lentils in soups, tacos, Shepard's pie. I make hummus with both brown and red lentils. They're packed full of nutrition. Lentils and mushrooms are great meat substitutes. LOVE them!

I need to put this on hold to finish watching later. Quick question, please: What is the difference between the different kinds of lentils? Do they have different flavors, nutritional value, texture, cooking time... or is it just the color? Maybe this is explained in the video and I will find out later...

Yes there are differences. Red lentils for example cook quicker an turn out more mushy. For the nutritional value I HIGHLY recommend the free diet tracking app Cronometer. It has a huge food database where you can look up the nutritional value of foods. You can add recipes to it to see the nutritional value of the recipe. I don't usually use it to track my food. I mainly use it to track my weight, body fat, and look up the nutritional info of foods.

I stopped eating lentils a while back because every time I eat them my joints hurt? Legumes did the same. I eat them but less often with no side affects. Any clue why that happens?
