I can recommend the vegan cookbook by The Happy Pear called The Veg Box. It has some lovely recipes. I am not vegan and the recipes adapt really well.

Absolutely inspired. I like plant based because there is so much more flavour and variety. I must confess, I do add meat, but in much smaller portions, and as a flavour rather than a main ingredient. Will try the cashew cream in my broccoli soup next time, sounds yummy.

I’m oven-less in my bus, too, but I did get a little collapsible Coleman camp oven that I can just pop on a burner. And it folds so small! If you’re craving some baking, I definitely recommend 🥰

Great video! I love the butternut squash and kale bake. You could try adding some nutritional yeast with added B12. It's entirely vegan and replicates the taste of cheese with the added health benefits for a vegan. I have a 100g pot of it and love to sprinkle it in bakes or on pasta!

Fantastic vlog, thank you Molly. I make the sweet potato and black bean burgers from Lucy's book too, but I microwave the sweet potatoes with the skin on and then leave them to cool before adding to the bean mix ( I scoff the skins too😉). Like yourself the mix easily makes 4 so hers must be huge, lol. If I don't have walnuts or find them too costly, I use sunflower and pumpkin seeds, works just as well. Will definitely look at those other recipe books and thanks for sharing your recipes. Much love to you up there in the Highlands xx

Considering vegan, but it seems very carb heavy, which isn’t good for the body. Contributes to excessive glucose and insulin issues.

‘Carbs’ get demonised because most people have refined carbohydrates instead of whole, minimally processed foods. True, eating refined sugar and white flour is unhealthy, but if you eat whole plant foods you get the best nature has to offer and will be the healthiest you can be

Being carb heavy isn't as much of a problem if you are not eating animal fats and products at the same time. A vegan diet is extremely healthy. 💚
