These tasty blackberry muffins were made with wild blackberries which, by the nature of them growing wild, are organic without any fertilisers or insecticides.
Ingredients:
One and half cup of blackberries
One-fourth cup of sunflower oil
Half cup of sugar
A pinch of baking soda
1 cup of self-raising flour (alternately you can use 1 cup of plain flour and1 tsp of baking powder)
Method:
Take1 cup of blackberries in a bowl. Add 1/4 cup of sunflower oil and 1/2 cup sugar. Mix it all well using a hand blender. Then add a pinch of baking soda and again mic it well. Then add 1 cup of self-raising flour and mix it using the hand blender. Then add 1/2 cup of blackberries and mix it with a spoon, so that the blackberries remain whole and it will add a punch when eating the blackberry muffins.
Line cupcake trays designed for air fryer with cup moulds. Distribute the blackberry muffin batter in the moulds. Bake in the air fryer at 160 degrees Celsius for 35 minute, checking intermittently by passing a knife in the centre. When the knife comes out clean, the muffins are done. Take them out and allow them to cool. Transfer them to a serving plate and enjoy the delicious blackberry muffins.
If you wish, you can decorate them with icing and make them into cupcakes.
