thanks ahmed. I've made a pretty in-depth video explaining how I shoot my videos here kzbin.info/www/bejne/f3_XgWNsnq-Sbs0 I've since gotten a few extra gear and upgrades though. But the essence to my style of videos is the knowledge of lighting ("cinematic lighting"), blocking (movement), shooting with the edit in mind and working with the camera settings (aperture, lens choice, fps, etc) in achieving the type of look that I want. There's no shortcut to learning all these things - It took me a full year of constant learning, trial and error to get to this point. My older videos all sucked big time (I think I still suck now but I guess now I suck less lol).

Thank you for the recipe ! I have tried it, it’s nice however it feels impossible to have the inside of the pancake cooked enough which means not soggy. Do you have any tips for that ? I think I encounter the same issue when I used defatted hazelnut flour to make pancake. So it might be linked to those kind of flour. Thank you for your help !

hmmm, for a bonito substitute, i wonder if you couldnt just shave some dried shiitake? similar umami profile, maybe theres another dried food im not thinking of that would sub better~

yeah, there's absolutely a suitable katsuobushi replacement, but it'll require a lot of work. Shaving dried shiitake straight up wouldn't work: 1. Can't eat raw shiitake (contains mild carcinogens). 2. It's probably too woody and tough to shave. An option would be to cook it then preserve it like how katsuobushi is made which is a lengthy process. Another problem with that is that dried shiitake has very little surface area to yield a good amount of shavings. I'm thinking king oyster would be a better route to take.
