I made this one before the holidays to trial it and it was absolutely the best pumpkin cheesecake we’ve had vegan or otherwise. I’ll make two more this Thanksgiving and another variation of this with apple crumble. The tofutti has the perfect consistency

Nothing better than a vegan, pumpkin cheesecake. Tofutti is super expensive where I live, so I usually just use tofu and fresh pumpkin puree, but this looks like it tastes much more like cheesecake with that tang. Also, you watch The Preppy Kitchen too?! He is so sweet, cute, and his homestead is incredible!

I have made a cheesecake before from another youtuber. I used violife and it worked out well. I think that one is coconut based. It has a sweeter taste than the daiya I was going to use.

I know the answer is probably, sorry there isn't one that will work nearly as well, but is there a substitute you can use for the Tofutti? I'd want to make it for someone with a soy allergy. I didn’t realize Trader Joe’s brand cream cheese was coconut based until it was too late (it’s Christmas Day and there’s no turning back). My cheesecake definitely did not set. I’m going to let it cook and freeze it to see if I can salvage it at all but my hopes are low. 😩 To make it a no bake would I literally just put it in the fridge instead of the oven or so I need to alter the recipe at all? Wish I would have done that instead.
