For anyone who needs a personal serving size, I make this for myself as a snack or breakfast! 1/3 cup of pumpkin purée (not pie filling), 1 egg, 1/4 tsp baking powder, 1/2 tsp (I use a full tsp), dashes of nutmeg, allspice, 3tbsp almond flour…mix all together. Place in a ramekin, microwave for 2 1/2-3 minutes. Pumpkin pie, single serving!

Add some well mashed white beans (Great Northern or Navy) to mashed cauliflower. A bit more carb, but it really enhances the texture and flavor of the mashed cauliflower.

I've made a keto stuffing with Steve at serious keto's stuffing recipe. He used chaffes in place of bread and then added sausage and different seasonings to make it taste like a traditional stuffing. I was the only eating it but I thought it was good.

It looks great! I like that the crust is both almond and coconut flours. Thank you Dave. I'm going to try this. Also, wanted to let you know that if you mix part Allulose and part Swerve you can get a good combination. Swerve has a cooling effect. Combining them neutralizes that. I like Allulose because it is a good choice for the diabetics in the family. It helps brown things when you bake. You can also put in stevia or a liquid sweetener and it helps with the cooling factor of erythritol. I also like a combination with monkfruit with both of those sweeteners. They are non-glycemic, good for insulin resistant people. This is all things I've learned since going low carb ketogenic. 😊

Just a note from a professional baker that I was watching when you’re done at the hour turn off the oven and open the oven door and let the cheesecake/pie cool in the oven and it will either eliminate or almost eliminate cracking at the top.

Okay so here is what I learned last year I did an all keto thanksgiving. I try to eat carnivore most of the time. I was sick for 2 days. I think it came from all of the substitute stuff like almond flour, and definitely the swerve. I made pumpkin pie and stuffing, cranberries, green bean casserole. I think because of the lack of the authentic original ingredients to the dishes there was an addition of way too many substitution flavors and spices. I know the artificial sweeteners had a lot to do with my digestive issues for the next couple days. This year I'm going to only select one or two keto dishes the rest will all be family recipes with whole ingredients. Maybe pecan pie with organic sugars / maple syrup and maybe I'll substitute half of the almond flour for regular flour trying to make the numbers better but not cause distress and tons of leftovers that no one eats.😅

Thanks! I will have to try this! Potatoes are starchy vegetables. Fruits are formed from flowers and contain seeds inside. When using allulose, you have to use more than with the other sugar substitutes. But I still use it as my primary sweetener. I use ginger for its anti-inflammatory properties. It helps with arthritis inflammation flare-ups.

I make farmers cheese. I use raw goat milk but you can make it with a gallon of full fat milk from the store. Heat the milk (intended to pasteurize it) up to 105'. Add 1/2 c white vinegar (I use 1c/ gallon goat milk) Gently stir and let sit 20-30 min. The curds and whet separate. Strain the whey off. What's left is farmers cheese. You can use it in place of ricotta, season it and use like cream cheese. It's my go to cheese when my goats are in milk. If you use lemon juice instead of vinegar it's called paneer.

My family, from Eastern Pennsylvania, has always used a REAL cooking pumpkin to make the puree. Cut up and cook a “Long Island Cheese” (not cheesy, just the name) pumpkin until tender. Then put the pieces into a Foley Food Mill sieve to create the puree. We NEVER used canned pumpkin! So great to make your own. And tastes so much better. We also add some cooking sherry to our recipe for an extra kick. Best pumpkin pie ever!

I made this yesterday with mixed results. My crust burnt. I baked the crust first as the written instructions stated, although you didn't show that in the video. The pie filling was still good, although I did have leftover filling because I didn't have a deep pie pan. I don't think that a deeper pan would make the crust not burn. Any ideas? I used a Erythritol/Allulose/Stevia blend for my sweetener.

For some reason I was expecting the recipe to have you bake or partially bake the crust before putting the filling in it. I probably made some pie recipe in the past that said to do that and it stuck in my head or something, haha. Thanks for this recipe, I plan on trying it since we'll have a house full of keto family members this year! Our traditions used to be going to Grandma's house for all the traditional Thanksgiving food. Now most of us live in different states, so instead of traditions we just plan what we want to do each year, who if anyone will be traveling/hosting, etc. This time we have family from Tennessee coming to our house in Texas, and in true Texan fashion I'll be doing turkey low and slow on the smoker!

Farmers cheese is very easy to make. Heat organic milk to 180-190, depending on elevation. Add 1/3 c lemon juice. Wait 1 min, stir 6 or 7 times. It will curdle and whey will separate out. Pour into a double layer of cheese cloth. Rinse the cheese cloth ball in cold running tap water to cool. Squeeze and hang for 15 min to drip any whey. That’s it. Some people keep the whey and use in protein shakes. Whey is healthy, but that’s where the carbs are. Some people use vinegar instead of lemon juice to curdle the milk, but the lemon juice is much more delicate taste.

I think if you eliminate the heavy cream you can use the cottage cheese without straining. Optionally you can use ricotta instead of cottage cheese. That would cut down on the labor quite a bit. I would add lots more seasoning than just ginger.

lol we lived fairly close to the Catskills Game Farm and our oldest son worked there in the summers. Early 90’s.
