i made it and its actually pretty good! im not even vegan but my sister is and we both really liked it! i tasted it the same day i cooked it (i couldn't wait) and it was a little bit too soft, but you could easily cut it anyway, After one night in the fridge it was perfect! it also tastes really good! thank you so much for sharing the recipe :)

I made this today... was skeptical about baking it compared to usually steaming my seitan. But it came out perfect... Man i tell you this one taste good after coming out of the fridge. I didn't wait till next day, I was too hungry... it was still perfect. Thanks, this my go to recipe now

@@ursulabach566 Sorry missed your question. Let's be clear: it is not a clone of a real deli-based salami. A real salami will have a harder texture with a more salty and greasy taste. This one is yet very interesting and also healthier because you know exactly what ingredients you put in.

The vegan diet is a religion. All the veg/fruit/nuts/seeds/grains/soy/corn/beans/legumes/herbs/mushrooms combined don't contain a single trace of 15 essential nutrients. Including all the fat soluble vitamins (retinol, D, K2) And thus children who go vegan.. their bodies don't develop any further. And in their mentally ill minds they believe that they age slower thanks to veganism. Pls vegans, there are thousands of ex-vegan interviews at this point, how can you ignore this. To hell with your brainwashed morals. They are man-made. It's a religion by definition. Meat/fish is the healthiest food there is. These are basically the only foods that have every single nutrient. Tribes who lived on exclusively raw fish and coconuts lived on avg 148 with zero disease. Don't believe google and their "126y old record" bullsh!t. They have a depοpulatiοn agenda. Veganism will eventually make you infertile. Especially growing teens and especially females. edit: the reason vegans are so obsessed with fake meat/dairy/egg products is bcs they are craving the nutrients in those foods.

Looks amazing, subbed! I think I might try making this salami using (briefly soaked) small tapioca balls and see how that works out. I love that you list ingredients, have clear directions, and answer questions. Well done! i would love a good corned beef or Wisconsin bratwurst recipe, my attempts were less than stellar! Store-bought products are so full of junk and are way too pricy anyway. Like you, switching to a whole food plant based diet has been so healing, I reversed diabetes and a slew of other health issues. I generally avoid oils because of that, but might have to make an exception here as a special treat.

I made this without the beets. and oh boy... it was so amazing. I am eating the whole thing as we speak, thinly sliced. I gave some to my non-vegan room mate and he couldn't believe how meaty it is and how it's got the traditional salami "kick". The only thing i'd say is don't forget the aluminum foil. I didn't have any, so the bottom "fried" a bit with the oil separating. Unless you like it a little crisp! Thank you for the recipe : )

The one thing that bugs me about products like this is that the marbling/fat isn't really fatty, it's mostly just for appearance. I guess the problem is that when you bake it, any fat would render out, so the fat would need to be added after baking, which is technically challenging. I wonder if there's some way to make empty channels where you could pipe a fat into after baking. Anyways, it's a gorgeous looking product, and I look forward to giving it a try!

You can make a «fat» from refined coconut oil with rice flour and add that. Sauce Stache has recipes for a fat he uses for different recipes, go to his channel and find. It does not disappear when baking. Also, he found his basic fat recipe from the Vegan Roast Pork recipe on the blog Full of Plants. Go there and look. I have used that fat recipe myself with luck, including for vegan lambs roll, which is a traditional, Norwegian christmas deli meat. 😊

@@mkw2784 Yes, but that is just cosmetic, it looks like fat, but doesn’t add any actual fat, which will enhance the flavour - which was Colin’s whole point and what I was replying to also. Adding actual fat makes a difference. You can make a batch, freeze it in a block and grate it to use as marbling in sausages, minced meat etc. YUM!

Hello Jing! Thanks for watching! In some batches, there was a hint of beetroot. If you don’t care about the colour, you may actually leave it out. Otherwise, you may use beetroot powder, try a teaspoon or two OR try annatto powder.

If you substitute the sugar for keto sugar and the cornstarch for xanthan gum it could potentially be keto in small portions. Im totally feeling this even though im a meat eater. I really want to try this as I hate all the junk in processed meat anyways. Thanks for sharing this ♥️

It lasts a week or so in the fridge and freezes well for months in the freezer. Just store it in an airtight container or a ziplock bag.

I made many different type of vegan salami. This is the best that I found. The only thing I changed is the amount of salt because, for my taste, the salami needs a little more of salt. Great work anyway! Thanks

You crave meat because your body is telling you that you need the saturated fats and the 15 vitamins you cannot find in plants, which are found in animals. Plants are not the natural human diet. You are killing yourself

@@Gorgeoustweaker Then please explain the higher health and life expectancy of vegans? I'm not even vegan, but this is absolutely bullshit. Not to mention that people can eat both meat and vegan products, since the amount of meat in todays normal diet are also far from a natural human diet.

@@sengelhard2982 “the meat today” you’re referring to is feedlot. these animals are sick, malnourished and injected with toxins. you obviously don’t want to eat a sick animal. there are local farms and butchers you’re completely ignoring for a moot point. vegan and vegetarian diets are manmade. never seen in nature. unless you are a cow. you are not a cow or a goat or horse. you do not have a digestive system like a cow or any of these animals, nor do you have 6 stomachs. the china study is notoriously fraudulent, as most studies are when ignoring context. all it proves is COOKED animal products are just as harmful as consuming plants and their anti nutrient properties. plants, like animals, do not want to die, so they produce natural toxins and antinutrients to prevent that. luckily, the animals who eat them are set up to process them effectively. we are not. our stomach acidity is naturally LOWER THAN A VULTURE’S. we have a simple stomach, our “digestive system” is made of bacteria. you are comprised of 97% bacteria. there is a reason “the great reset” entails herding everyone into a plant based diet. it is profitable. it is keeping you sick. all you need to do is dig deeper and find how the human body actually works. the contagion myth is a great place to start. there is plenty of research out there by doctors like weston a price, aajonus vonderplanitz, etc documenting tribes and their ancestral diets. i myself rigorously research the origins of agriculture and i’m planning on putting some content out on this myself. it’s obviously much too much to breakdown over a youtube comment but i think this will suffice. this information isn’t going to be received by everyone, i’ve accepted this. so you don’t have to believe me. if you understand nothing, understand this- the problem ALWAYS LIES within the industrialization. i only want to help.

First crack at this turned out delicious. I didn't have a meat grinder so everything was done by hand. The only disappointing thing was that the salami turned out brownish instead of red. The dough was very red before wrapping. Did I bake it too long or could another factor make the salami brown? Thanks!

Oh shit I didn't realize this was only a day old. I'm trying to make this today and I'm unable to find vital wheat gluten in my area. I'm going to try it with xantham gum, op/anyone think this would come out the same? I've been missing cured meats!

T Brg If you’re up for doing a little bit of work, and can’t find VWG, you can wash flour. I don’t know much about it. I’ve done it only once, and didn’t really know what I was doing, and the chik’n I made didn’t turn out well. With this recipe, I don’t know at what point, or how you could add the beet, and the remaining ingredients. There are videos on how to wash flour. One lady with a video has been washing flour for years, so she could possibly be a good source for you to turn to, if she responds to questions and/or comments.

@@lanycera Nah!! I've had carcass of many kinds in my life. I can assure you there are very few food items better than a ribeye or a piece of thick cut bacon. Our canines do a wonderful job of tearing the carcass into small delicious bites. Happy Holidays!!

Even before i went vegan, salami really wasn't very appealing to me. In spite of that, your vegan salami looks very tasty and very realistic. I had to do a double take on your thumbnail image. I bet, some slices of that in a submarine sandwich, or atop a vegan pizza could be completely delicious and satisfying.

I'm very glad this was a video, rather than still photography, as I'd have worried I'd messed up with the loose white dough and the very wet red dough. Beyond bread, pasta and pastry I've little experience of baking .... and with additional ingredients like starch, these doughs were NOTHING like any of those. First attempt has produced something edible, though can't say it's an enthusiastic eat. It actually does remind me of a flavour from my childhood, back in the days of 405 line B&W analogue TV, but can't quite put my finger on what. Came out a bit dry, brown and on the bland side, a pity as it spent much of the cooking time smelling great Mind you, not only has the lettering on my ancient stove worn off (so I suspect my oven may have been one gas mark too high for the first 40 mins), but I DO like my garlic!! Still, as I said, it's edible .... waste not, want not and all that!! I'd wondered if the colour difference between the two combining techniques at the end of the clip was down to no beetroot in the manual method sausage shown and can now safely say .... I evidently need to buy a grinder. I thought of using my food processor, but suspect would totally pulp a dough this loose. Perhaps the hand chopping explains the slightly spongey texture, or maybe it merely needed more kneading or some rest before going into the oven. Next edition will include (additional) beetroot powder, kelp powder (I'll try 1tsp for that 'iron' bite) and may substitute 50% more red wine vinegar for apple cider vinegar. Blackstrap molasses for sugar, perhaps? Definitely will persevere, as there's a decent generic sauage base to be developed from this. One thing I tried with the "fat" worked well. Rather than slicing the white dough, I ripped, rolled and tore off by hand. The result was a very natural looking 'fat' distribution.

Eh, arguably the wheat gluten is a weird ingredient depending on where you live xD even something as mundane as soy can be a "weird" ingredient. It's better to know what things are than to villify everything you aren't used to.
