Coconut sugar experience with this recipe: So I made it with coconut sugar - the only sugar I had at home, and it's amazing, however, not like condensed milk but more of a caramel flavour. The texture is less firm, more water-like, even though I had it reduced to less then half. Nevertheless tastes nice and I poured it in my coffee too. Thanks for sharing your amazing recipes!

+Edina Kurdi Thanks for sharing, my dear. Coconut sugar is far less sweet than regular sugar and has that lovely caramel-ness to it :-)

Did this with almond milk and pure cane sugar I had on hand. It worked perfectly maybe a little less syrupy but still had the same end result and it only took about 25 minutes. This tastes amazing in Thai tea as I'm a big Thai tea fan but can never have it without the sweet condensed milk to compliment the flavor.

If you use 1/2 soy milk and 1/2 coconut milk, it turns out even better! A tip to know if it’s ready: put a plate in the freezer and pour a tiny drop of the condensed milk on the cold plate. Tilt the plate and if it drips slowly it means you’re done!

The thing with sweet condensed milk, vegan or not, is that you don't have an idea of how time-consuming it is to make and it requires a lot of patience. That's why making it at home kind of gives a whole other value, don't you think? Thank you so much for showing yet another vegan version of a cooking staple. =) Your videos are the best! Short, high-quality and super well edited. I love your channel.

I never thought of making vegan sweetened condensed milk, but this is a very simple recipe. I think that one of the first things that I'd use this for is a topping for a Vegan Filipino style cassava cake. The one my family used to make was topped with condensed milk and then put under the broiler to further caramelize it. Thanks for the inspiration. I'll let you know what happens when I make it =) Wishing you a happy and healthy new year 🎉🌟

Wow. Just wow. You are so thoughtful and creative. Once again right on time as many of us out here (at least myself) was wondering how to come up with a caramel sauce that was vegan and here you have it! Now THIS would go great in my Vegan Caramel Frappuccinos! (ie banana with coffee syrup flavoring smoothies). I bet you are right that would be so tasty to dip pastries and buns into as well.

So the coconut milk and white cane sugar turned out beautifully! It has a great taste and consistency. I made it to use in a vegan version of the traditional Puerto Rican holiday drink "coquito"! The almond milk, isn't as beautiful looking, and has a very distinct almond flavor (obviously) but it's tastes good and will probably be used for some kind of almond cookie.

I didn't have soymilk on hand, so I used fatty coconut milk to make this with 1cup of sugar, and it tastes amazing! I tried making iced coffee with it, but it really doesn't mix well with cold liquid, so you get lumpy stuff at the bottom of the mug...does that happen with this too and you just gotta stir it good enough? Should probably let the hot coffee dissolve it first.
@marystestkitchen9 жыл бұрын
Thanks for sharing, dear. The fat in the coconut probably is causing the issue; it won't mix well with the water in coffee, especially when cold. Mine dissolves fairly easily though I have to stir it a bit same as when I used to have the non-vegan version. I think your idea of dissolving it first would help but also using a blender could work too. Thanks very much for sharing your experience, dear :-)

I made this about two days ago and it's delicious! It tastes exactly like very sweet tapioca pudding to me. It's wonderful in my tea. I stored it in the fridge, and it took on a taffy-like, stretchy consistency, so I popped it in the microwave and it went back to normal. After about two days, it was no longer smooth, and there were sugar crystals in it. It still tastes delicious, but I was wondering if there's a way to prevent this. Maybe I overcooked it? Thanks

Hi I'm so glad you found my channel! I'm not sure which videos you watched yet but I made this recipe years ago when I wasn't having any noticeable health issues. In recent years, I discovered that my chronic pain is triggered by consuming sugar and other dense forms of carbohydrates. These days, I would never make this for myself.

Congrats on going vegan, my dear! I'm not sure how your condensed milk crystallized as it's never happened to mine. It can form a thin layer on the top but it can simply be mixed in. The time seems a little off - I simmered mine below the boil-over temperature, so I didn't have to keep an eye on it and it still had lost more than half the liquid after only 10 minutes. A super easy way to keep an eye on the evaporated water is to weight the pot. Still, the vegan bounties were amazing, thanks for enabling my cravings again

I was looking for an alternative to the sweetened condensed milk I use when I make my Peruvian cookies called Alfajores and I found this video, really awesome thank you for posting. I do have a couple of questions...since I boil the regular cans for 3 hours to make it thick as it goes in the center of my cookies, would I be able to get the same amount of thickness by continuing to cook on the stove? I think I will try using an alternative sweetener (one with a mix of erythritol&stevia) in combination with sugar and/or an alternative sugar as one I’ve been using which is very similar to ordinary sugar, but with lower GI (made from cranberries). A balanced mix will probably be best, as some of the alternatives have a bit of a bitter aftertaste. So it won’t be perfect for diabetics then, but of course better than ordinary sweetened condensed milk.I wonder how it would be to make it with coconut milk... Guess I will have to try one of these days. I just would love to try it for an icecream base and also try to make vegan Scottish tablet or fudge using it. Not sure if it would be possible, but... ☺️

I made it in 35 min and stopped to measure it, it was under a cup and was basically caramel. I will try at a shorter duration to see if it can be more milky as oppose to the caramel taste.

hey, Mary! I would to see if this sweetened condensed milk works for traditional fudge. would you mind making a video of you using this with traditional fudge?
@marystestkitchen9 жыл бұрын
+Jennica Steele I may try that one day. Thanks for your request, dear. I think somewhere down in the comments some viewers have tried fudge recipes and it did work!

Looks amazing. However would it work with coconut sugar I try to avoid refined sugar
@marystestkitchen9 жыл бұрын
veggielove84 As I mentioned in the video, you would not get the same result. However, theoretically, it should work though I suspect the final result will have a maltier taste and darker colour. Have fun experimenting and please comment back if you try it! :-)

I didn't even know vegan condensed milk was a thing. I totally have to try and make brigadeiro (Brazilian chocolate balls) now!

Hi Mary!! I have a question. Do you continue to stir the milk so it doesn’t begin to boil/bubble at all?
@marystestkitchen3 жыл бұрын
Nope! You can just let it simmer down. You can see at 1:42, I just let it sit there at a rolling boil. However, you must watch it closely. And turn the heat down if it gets too foamy; at that time you can stir it to cool it down. Keep adjusting the heat so it doesn't get out of control. Hope that helps!

Can I try to use brown sugar?? I want to use a healthier alternative to my condensed milk.

So I attempted to make this and it worked out great, but only for immediate use. I put it in a mason jar and then the fridge after cooling down, but everything crystallized. Am I doing it wrong? How can I stop it from crystallizing? Your long time fan from IG, Jiuzeppe :)
@marystestkitchen8 жыл бұрын
I'm not sure. This hasn't happened to me BUT I have read about it. Apparently all it takes is one little undissolved sugar crystal to start a chain reaction that makes the whole thing crystallize. Some say adding corn syrup prevents this. I don't know if this would be a solution though. Let me know if you decide to experiment with it. Good luck!
