Mary's Test Kitchen

Vegan sweetened condensed milk has been impossible for me to find locally so I finally made my own. Turns out, it's super easy to make. Just use soy milk and sugar and boil it down.
Printable recipe and full story : www.marystestkitchen.com/easy-...
A NOTE ABOUT SUGAR: Hey guys, a few of you have been asking so here's the low down. Some white sugar is filtered through bone char during the purifying process. This is true of most white cane sugar and often brown/golden sugar as well. Other white sugars aren't typically filtered this way, such as beet sugar. Many organic brands will be labelled vegan. The ONLY way to determine for sure if any brand of sugar is vegan-friendly or not is to contact the manufacturer directly to ask specifically about bone char (if not labelled as vegan). Fun fact: Sugar made in Australia is all bone-char free!
For those in Western Canada, Roger's sugar coming out of Taber, AB doesn't use bone-char either. The product number will start with "22" if it's from Taber. If it starts with "10," it's from Vancouver,BC where it is NOT vegan-friendly.
VEGAN SWEETENED CONDENSED SOY MILK
Makes 1 cup
INGREDIENTS (US)
2 cups soy milk (regular, NOT low-fat)
1 cup granulated sugar
INGREDIENTS (Metric)
473 ml soy milk (regular, NOT low-fat)
200 g granulated sugar
DIRECTIONS
Combine the soy milk and sugar in a medium sized sauce pan. Make sure the sauce pan is large enough to accommodate a fair bit of bubbling.
Bring the mixture to a boil over high heat. Keep watch so that you can stir down or remove it from the heat when it starts to bubble up. Be careful as this can bubble over quickly and create a sticky mess.
Turn the heat down to medium (or a bit lower) so that the mixture can simmer and continue to evaporate.
Keep cooking until the liquid has been reduced to one cup's worth. Stir occasionally. As with cooking caramel or syrup, it's important to keep an eye on the mixture so that it doesn't bubble over. If you find the mixture bubbling up, stir it vigorously to keep the bubbles down or turn the heat down a bit.
When the mixture has been reduced to your preference, remove it from heat and pour it into a clean heat-proof container. Let cool before using.
Store for up to a week in the fridge. Enjoy!

Coconut sugar experience with this recipe: So I made it with coconut sugar - the only sugar I had at home, and it's amazing, however, not like condensed milk but more of a caramel flavour. The texture is less firm, more water-like, even though I had it reduced to less then half. Nevertheless tastes nice and I poured it in my coffee too. Thanks for sharing your amazing recipes!

Did this with almond milk and pure cane sugar I had on hand. It worked perfectly maybe a little less syrupy but still had the same end result and it only took about 25 minutes. This tastes amazing in Thai tea as I'm a big Thai tea fan but can never have it without the sweet condensed milk to compliment the flavor.

If you use 1/2 soy milk and 1/2 coconut milk, it turns out even better! A tip to know if it’s ready: put a plate in the freezer and pour a tiny drop of the condensed milk on the cold plate. Tilt the plate and if it drips slowly it means you’re done!

The thing with sweet condensed milk, vegan or not, is that you don't have an idea of how time-consuming it is to make and it requires a lot of patience. That's why making it at home kind of gives a whole other value, don't you think? Thank you so much for showing yet another vegan version of a cooking staple. =) Your videos are the best! Short, high-quality and super well edited. I love your channel.

I never thought of making vegan sweetened condensed milk, but this is a very simple recipe. I think that one of the first things that I'd use this for is a topping for a Vegan Filipino style cassava cake. The one my family used to make was topped with condensed milk and then put under the broiler to further caramelize it. Thanks for the inspiration. I'll let you know what happens when I make it =) Wishing you a happy and healthy new year 🎉🌟

Wow. Just wow. You are so thoughtful and creative. Once again right on time as many of us out here (at least myself) was wondering how to come up with a caramel sauce that was vegan and here you have it! Now THIS would go great in my Vegan Caramel Frappuccinos! (ie banana with coffee syrup flavoring smoothies). I bet you are right that would be so tasty to dip pastries and buns into as well.

So the coconut milk and white cane sugar turned out beautifully! It has a great taste and consistency. I made it to use in a vegan version of the traditional Puerto Rican holiday drink "coquito"! The almond milk, isn't as beautiful looking, and has a very distinct almond flavor (obviously) but it's tastes good and will probably be used for some kind of almond cookie.

Seeing as how typical white sugar is not technically Vegan (it is filtered through "bone char" made of course from Animal bones), I would be inclined to try this with my favorite cruelty-free coconut sugar. I made this about two days ago and it's delicious! It tastes exactly like very sweet tapioca pudding to me. It's wonderful in my tea. I stored it in the fridge, and it took on a taffy-like, stretchy consistency, so I popped it in the microwave and it went back to normal. After about two days, it was no longer smooth, and there were sugar crystals in it. It still tastes delicious, but I was wondering if there's a way to prevent this. Maybe I overcooked it? Thanks

@crazedanisa Your google settings don't allow me to comment directly, so I hope you see this! This is meant to be very sweet, but you can adjust the amount to your preference. Keep in mind that the sugar directly affects the thickness of the final product. Happy experimenting!

Hi I'm so glad you found my channel! I'm not sure which videos you watched yet but I made this recipe years ago when I wasn't having any noticeable health issues. In recent years, I discovered that my chronic pain is triggered by consuming sugar and other dense forms of carbohydrates. While this vegan condensed milk is delicious and fine for healthy people, if you suffer from chronic inflammation and pain like I did, you might reconsider. These days, I would never make this for myself.

Congrats on going vegan, my dear! I'm not sure how your condensed milk crystallized as it's never happened to mine. It can form a thin layer on the top but it can simply be mixed in. I suspect that uneven heating/ too much stirring can trigger crystallization as this is can be a problem when making dulce de leche.

That Carnation condensed soy milk seems to be available only in Australia. Bummer! I've used a similar method before, but I don't have the patience! I've also used cream of coconut (like Coco Lopez) as a good substitute for condensed milk, but I think it might have some additives in it. Thanks, Mary!

lamllemaussade Yes, I was surprised to find that it seemed to be only in Aus! I have used coconut cream as a sub for condensed milk before too (like in pumpkin pie) but I find that I don't always love the taste of coconut in certain foods. In this case, my need for a certain taste outweighed my natural laziness ;-) Thanks for your lovely comment, dear

Mary's Test Kitchen | Vegan Cooking I made this before watching this video but the soy flavour was super strong, do you know why? It tasted a lot better when I made it the first time vegan with rice milk, even though it was low fat, all I did was double the rice milk, I don't remember what the recipe was though. It also tastes great with a little coconut milk

veggielove84 As I mentioned in the video, you would not get the same result. However, theoretically, it should work though I suspect the final result will have a maltier taste and darker colour. Have fun experimenting and please comment back if you try it! :-)

I didn't have soymilk on hand, so I used fatty coconut milk to make this with 1cup of sugar, and it tastes amazing! I tried making iced coffee with it, but it really doesn't mix well with cold liquid, so you get lumpy stuff at the bottom of the mug...does that happen with this too and you just gotta stir it good enough? Should probably let the hot coffee dissolve it first.
@marystestkitchen
@marystestkitchen 9 жыл бұрын
Thanks for sharing, dear. The fat in the coconut probably is causing the issue; it won't mix well with the water in coffee, especially when cold. Mine dissolves fairly easily though I have to stir it a bit same as when I used to have the non-vegan version. I think your idea of dissolving it first would help but also using a blender could work too. Thanks very much for sharing your experience, dear :-)

Can this work with any non dairy milk? It looks wonderful!
@marystestkitchen
@marystestkitchen 9 жыл бұрын
qochemist I have only tried this with soy milk, but I have heard of people using almond and coconut milk. I would recommend using creamy milks such as those or cashew milk for their high protein/fat content which will result in the thick texture we're going for here. Happy experimenting, dear.
