THANK YOU FOR THE VIETNAMESE VEGAN RECIPES!! As a vietnamese myself I love the nostalgic factor this video gave me, I've eaten this dish all throughout my childhood and seeing a veganized version makes me so happy!

My grandma used to eat these and my dad just loves the bitter melon. This brings back so much memory. Thank you.

Seitan needs to boil for like an hour before it's ready to prepare or eat. The texture changes from being super gelatinous to spongy. I highly recommend to cook seitan before preparing it in a 10min dish.
@Thevietvegan7 жыл бұрын
Well damn haha. Like I said, definitely not a seitan master myself. Eddie and I liked the texture of this but it was quite soft and dumplingy and not like seitan I normally have. XD
@tamcon727 жыл бұрын
I wouldn't say boiled--this turns it into a sea sponge! It has to be kneaded well and then simmered--simmered--for a long time and then let to rest.
@haleycasillas90107 жыл бұрын
Yes exactly. Personally I couldn't even stomach the dumplingy texture after the first time i made seitan. I was so upset and didn't make it again until I researched a bit more.
@elizabethshaw7347 жыл бұрын
tamcon72 it can also be steamed either way it needs to be wrapped in foil so that it doesn't get wet. I don't like the seitan people just boil in the pot uncovered. It comes out wet and misshapen. :-(

I typically boil my seitan for half an hour--(many of my seitan recipes came from Connie's rawsome kitchen)--she has some great recipes for mushroom powder and "beefless" soup stock as well...thanks for the recipe--I love bitter melon!...maybe the seitan can be partially boiled before stuffing?...just a thought!

I have tried bitter melon many ways even overseas from native Cooks. I am going to try this. I never was one to like anything better but I want to learn to like it because it's so good for me.

Very clever way to use seitan! Looks pretty damn close to what our mom's use to make. I (Dee) was never a fan of this dish, I used to only half chew the bitter melon so I wouldn't taste it 😂 Maybe it's time to give bitter melon a second chance

Another Vietnamese dish with bittermelon is to stir fry it with eggs, I imagine you could do the same with tofu scramble and green onions :) It's a dinner side dish.

The Viet Vegan We have the same dish here in the Philippines, we call it ginisang ampalaya (sauted/stir fried bitter melon). I tried it with tofu scramble and it turned out good.

I bought some bitter melon at the Asian store a few days ago as I want to try new and different foods. Bitter is the right name for this vegetable. I threw on in my soup. Not the smartest choice. So I reached out to KZbin to help know what to do with the rest of the bitter melons that I have. I’m excited to try you method. By the way, I’m not a seitan expert, but the Avant-garde vegan is. He uses it all the time. Working the seitan more will help with the texture. After he kneads it a ton, he uses a rolling pin and beats it. So using more muscle and time will help.

I used to love eating this dish, and I miss it. Not a big fan of seitan, but I'll try your recipe ! Like others, I was surprised at how cooking seitan for only 10 min would turn out, as it usually takes more time than that, but I'll experiment.
@Thevietvegan7 жыл бұрын
Like I said, it's a little soft and tender, but I liked it =P It was similar to the ground pork mixture it usually is made with =P

Is the seitan really cooked enough? When i make seitan (you can call me a seitan master, yes), I cook it for at least one hour, even if theyre as small as the ones you made in this video :)
@Thevietvegan7 жыл бұрын
Maybe my gas stove cooks really quickly but would float whenever it cooked through. I think I simmered for about 15 minutes, but if you wanted a firmer texture I'm sure you could cook it longer. I'd just be afraid that the bittermelon would be overcooked.
@rose2dimples7 жыл бұрын
The Viet Vegan I've never made seitan before, but if you are cooking it for an hour then wouldn't all you noodles get overly mushy? And yes you would overcook your bittermelon too.
@luluhoang83927 жыл бұрын
The Viet Vegan can you cook seitan first and than stuff the bitter melon?

I have the flu so I have been eating a lot of kanji and I miss measured my mushroom broth powder which I hang on to like gold because I have to order it and everything was a mess it also over boiled my entire stove is now covered in brown starch! I made a second badge in the rice cooker and I've got to make sure my assistant doesn't throw it away because this one came out good but I would never make it without the mushroom broth powder and a couple of dried shiitakes.

I wonder if this taste like traditional bittermelon or does it. taste totally different because it's vegan
@Thevietvegan7 жыл бұрын
+shen d i found it tastes pretty similar because the seitan is kinda sweet like pork, and bittermelon is pretty powerful as a general flavouring haha

Next time steam the seitan stuffed butter melon for 30 to 40 mins to cook the seitan entirely , then add it to your broth :)
@Thevietvegan7 жыл бұрын
Maybe I'll try that next time! I just don't want to overcook the bittermelon.

From Wikipedia: Trypophobia is a proposed phobia (intense, irrational fear, or anxiety) of irregular patterns or clusters of small holes or bumps. The condition is not officially recognized as a mental disorder, and is rarely referenced in scientific literature. Although few studies have been done on trypophobia, researchers hypothesize that it is the result of a biological revulsion that associates trypophobic shapes with danger or disease, and may therefore have an evolutionary basis. The term trypophobia is believed to have been coined by a participant in an online forum in 2005. Since then, the concept of trypophobia has become popular on social media.

I hate the judgement that come with being a Vietnamese Vegan, people can't just seem to get it in their heads that I don't want to hurt animals. Has nothing to do with marriage or Buddhism or any of that crap. 🙄
