You used maida chef. Wrong! You need to use rice flour + corn flour. Using maida means it will go soggy quickly! Cause it has a lot of gluten! Also the tempura batter is very crisp with the actual Japanese tempura flour cause their rice is diff for it ^^ They sell the tempura flour on amazon.

Just add corn starch to your regular maida to make it weaker and more suitable for vegan Tempura.

Tempura is prefered on the vegetarian side or for seafood though not with big fish, but like prawn or small tiny fishes ^^ It originates from Japan and they say its better for veg dishes or seafood.

Could be several factors. 1) The veg must be dry before you fry. Else it will take too much oil and become soggy 2) The flame should be medium. If its low then it will become soggy 3) This chef uses maida. Which is WRONG. You should use rice flour+corn flour. 4) You might have added too much water/too many ice cubes, making the batter too watery faster 6) You need to drain the oil on a rack. Not on paper towels since it will steam the veg and go soggy quickly 5) If you use watery veg like cabbage, brinjal, zucchini then it will all become soggy. For tempura, use starchy and hard vegetables like potato lotus root carrot onion capsicum long beans etc. Tempura is also suitable for vegetarian dishes or for seafood only (for small fishes like prawn or other tiny fishes).

Not good at all . They make dipping sauce , they hv diff technique of making batter . Its just fried vegetables which u hv cooked. Its an insult to their hard work which their chefs do.
