Sorry, she was wrong. There is a specific order for eating Kerala Sadhya. All curries should not be mixed together. If you do so, you won't get the real taste. Each curry has its own purpose. Some are for digestion and some for taste balancing. For example Ginger Tamarind(Inchipuli) and pickle(Achaar) are for taste balancing. They should not be eaten like other curries as they are very spicy. Touch them lightly on the tongue with a finger whenever you want. There is a definite rule for having a Sadhya. There is even a rule for placing banana leaves on the table. The tip of the leaf should be placed to your lefthand side. Those who want to know the complete rules can contact me. 🧡Namaskaram🙏🏻

I am 84 years old. And I have interacted over the decades with a large number of cooks from different parts of India (only vegetarian) the majority being Tambram and malayali Nambudiri cooks. These days most youngsters hardly know the significance of the rules and practices in consuming "special occasion" foods. Sad.

@23:38 "...is the savoury *wersion* " : In case anyone was wondering, in Hindi the letter "व" represents both "wa" and "va" ie. *W* and *V* so native Hindi speakers may unintentionally use them interchangeably for eg: "Vertical" may sometimes be pronounced as *wertical* "Western" may sometimes be pronounced as *vestern* They are usually able to correct themselves if they are cognizant/actively make a conscious effort to differentiate between *v* and *w* . Please note that this comment is in no way an attempt to put anyone down but just for the sake of information that may serve as an explanation to anyone who may have wondered about this.

there's another popular way to eat a Sadya. We taste all sides (palyas) individually with rice, and then decide which one to go for a second serving! and even the curries have a specific order - like first rasam(the papadam goes here), then the red (thicker) curry, and lastly the white curry (made with curds). sweets like payasam etc come between red curry and the white one and the meal ends with curd rice!

@21.54 : Buttermilk earns its name from being the residual liquid, often referred to as whey / "milk," left behind after churning sour cream to extract the butter. However, in restaurants, instead of the traditional method, they opt to dilute curd / plain yogurt and infuse it with a tempering/"tadka,"/ "chauk" of whole chilies, mustard seeds, and curry leaves for added flavor and complexity. In Chennai's Udipi / lunchtime restaurants, at the end of the traditional banana leaf meal, servers arrive with a stainless-steel bucket brimming with the refreshing buttermilk. With practiced precision, they pour it from a stainless-steel mug-no tiny plastic cups in sight-directly onto the open palms of eager patrons, guiding the cool & spiced liquid straight into their waiting mouths! Grateful patrons savor every drop, drinking to their heart's-and esophagus's-content!

22:37 she said wrong. Starting with spicy things like achar and chili , ending with sweets. Why ? The first bit of spicy alarm your brain to produce digestive juices in your stomach. (Means hey stomach the food is coming 😂). Then you start with the middle items like thoran, olan, kuuttukari etc along with sambar and pappad. It's your main course. Then you eat with aviyal and parippu Kari(not on this menu). Aviyal and parippu Kari contain lots of butter and ghee. It's a heavy food to digest. But don't worry, your stomach has already produced enough digestive juices because of the spicy start. After finishing your main course food, drink rasam first. Because it helps increase digestion. Because of the spicyness of rasam, you need to cool down. So drink moru (the butter milk 😂). Or you can mix rasam and moru 1:2 ratio. Now you finish all your food. Ohh don't forget the drumstick. (The drumstick also helps to improve sexual hormones. Check in Google). Finally sweet. Why are sweets in consuming last ? When you finish your food, you need to inform your brain that my meal is completed. Just when you start with spicy things first. Sweet means Sugar. One of the properties of sugar or sweet is to feel that you are full and also trick you to take a rest after the meal.😂. In our tradition , after a full meal / lunch the people will take some rest or a short sleep to help the stomach to digest food. But nowadays no one has time to rest. Fast moving world. That's why health issues are common. This is a proper ayurvedic tradition. You will understand more when you visit Kerala ❤
