Ratus Kitchen’s episode today shows how to make Malaysian vegetarian fried yellow noodles, called Vegetarian Fried Mee or Vegetarian Mee Goreng, locally. This dish is made with yellow wheat noodles with mustard greens, bean sprouts, fresh and dried tofu puffs and chive fritters. Seasoned with kicap manis, a sweet caramel sauce, sweet chilli sauce and briny light soy sauce, this dish is an amalgam of flavours.

Chive Fritters: • Simple Chive Fritters ...
Ingredients:
450 gm fresh yellow wheat noodles (mee)
Chilli paste made with 4 dried red chillies and 2 fresh red chillies
1 tbsp meat curry powder
3 pieces of fresh tofu, fried and cut up into 8 pieces each
6 pieces of homemade chive fritters, each cut into 4 pieces
5 pieces of dried tofu puffs, each cut into four pieces
3 bundles of mustard greens, stems and leaves cut into 1inch lengths and separated,
1 big onion, chopped
11 cloves garlic, chopped
2 medium potatoes, sliced small
4 green bird’s eye chillies, chopped
1 medium tomato chopped
1 tbsp sweet chilli sauce
1 tbsp kicap manis (thick soy sauce with a caramel flavour)
2 tbsp light soy sauce
2 tbsp cooking oil
Salt, if necessary
