Dear, Beth I'm 100% Thai and traditionally we just serve it in blue pattern earthen wear or any bowl u'd like. I think the way that restaurant served is just for decoration :) but it's not wrong. I think it's really creative. Actually I like ur idea of making it. Though it's not the original green curry but I understand cuz some of the ingredients are probably hard to find in ur local store. Likewise, cooking is creative. U can adapt in what ever taste u like. No rules :) also, I really enjoy watching ur videos and seeing those creativity art throughout your cooking. Love Eve x

You can buy milk free puff pastry in most large grocery stores. And Vegan vanilla ice cream is wonderful with the pear tarte tatin

Hi Beth...I just saw this video. This is awesome! I'm Thai and just wanted to answer your question about the squash. No, we don't do it in our traditional dish with curry. Matter of fact, squash isn't something most Thais are familiar with. If we serve curry in any kind of fruit-vegetable type of produce, it's usually coconut. In any case, this set looks great and I think I'm going to try it out for this year's Thanksgiving here in Thailand with my expat friends. Thank you again!

There are some vegan cheeses, creams, and butters that could be used to replace the dairy used in these recipes, so for the salad you don't have to just leave the cheese out. Just find a good vegan substitute. As for the sugars, some still aren't vegan. Cane sugar is filtered through charcoal that could contain animal bones. So if you want to make the recipes with sugar in them vegan, just make sure the sugar you're using is beet sugar or vegan sugar.

+Tobi Sterling There are vegan cane sugars too. I do have to say, I have only seen one brand that has made it, but they have it! Beet sugar is a little less sweet and more mellow, so it may not work always.

You could always make the tarte tatin vegan by purchasing vegan puff pastry (i've purchased mine before at whole foods) and using a vegan butter substitue. Then for whipped cream, you can use coconut milk! Put the can in the fridge overnight then the next day turn it upside down and open it. It will be thick and you can use instead of heavy cream to make whipped cream!

This is really thoughtful, I think most people expect the vegetarians to stick to the side dishes, but this is nice because it shows you thought of them.

I've only made the salad from this menu, and it is one of THE BEST salads I have ever had! It was just awesome. My husband is picky about his salads too, so him liking this salad was extra great to know :)

Hello Beth, I'm a viewer Thailand. Is is indeed a tradition to serve the guest of honor or high rank aristocrats with these decorated vegetables. In the old days (when Thailand was still called 'Siam') Royalties are served food with carved fruits and vegetables as side dishes or as the food containers (all of which are beautifully carved and edible) the kitchen maids in royal residents were all able to do this. They'd carved watermelons pumpkins mangoes squahes, (all tropical fruits available).

made the cranberry bread yesterday! added grapefruit zest instead of the orange. it smelled soo delishious and the taste and texture of the bread turned out amazing! thank you Beth :)

Yeah! So happy to hear that! Yes just saw the photo and it looks delicious! I'm VERY proud of you! I also love the idea of cointreau, I'm going to try that next time:) The nice thing about this recipe is you can make all kinds of flavor combinations. Add 1/2 cup chopped rosemary in the flour for Rosemary bread, or Olives for Olive bread, the combos are endless! Thanks for reaching out and sharing your results. I love to hear how it goes! :)

this is the most beautiful and thoughtful vegetarian dinner i have seen! thank you so much for dedicating time to researching vegetarian ethics. as a veg of over a decade, thanksgiving was never very exciting to me. my options were to either make a tofurky (gross!) or load up on carb-filled side dishes and breads. you have made me excited for thanksgiving for the first time in years! thank you again!

Thank you for taking all the vegetarian comments into consideration and creating such an appetizing menu!Gorgonzola/Feta taste great too with that salad! Also about the onion and garlic not being vegetarian i think what most of these individuals mean is that they don't consume them not that those are not vegetarian roots/veggies. I know most strict Brahmins/Jains/Buddhist do not consume root vegetables, as uprooting a plant kills it. their diet is much like the shojin-ryori cuisine of Japan

Hey Beth! Just wanted to let you know I made your vegetable green curry and it was a massive hit! My dad said it was the best homemade curry he's ever tasted! The only thing I did different was add a lot more of the veggies because I didn't want to waste the rest of it, but there was still a lot of liquid to go around so it worked out well, and I also substituted stevia for the sugar because my dad is diabetic and I try not to add sugar whenever possible. Thanks so much for the beautiful meal!

Also, you might know this by now but Earth Balance is a great substitute for regular butter and according to my dairy eating friends say that it tastes exactly like dairy butter. It can be found at most mainstream grocery stores. Vegan cheeses have also come a long way and those can also be easily found or made. For vegan feta I like to freeze, thaw, then press firm tofu and then cube or crumble the block and soak it in a marinade of red wine vinegar, olive oil, salt, black cracked pepper, and italian dried herb mix over night and it will be similar to dairy feta but more heart healthy and probably less costly

that green curry served in squash is not traditionally thai. we normally serve it in a simple bowl but it looks so good thou!

Hmmm do you mean the puff pastry? Or the bread? If it's the bread, the better thing to do would be to actually bake it off, allow it to cool and then wrap the whole thing in plastic wrap, and then tin foil and freeze that. Then the night before allow it to thaw in the fridge, and then pop in the oven (uncovered, just right on the rack) for about 10-15 mins at 400 degrees. I'd be afraid freezing the dough would do something "funky" to the yeast, and prevent it from rising while it bakes.

In thai,we have pumpkin curry in a pumpkin bowl. However, we do that only for beautiful decoration.

Some marshmallows don't use gelatin -you gotta read the packaging. *Krogers house brand cheese is fully vegetarian friendly/non-renet. Wal-mart claims to not know because they use a third party & don't specify ingredients with them even tho they've had many requests to use microbial enzymes instead!

Very nice menu for veggies... OR you can serve all the traditional side dishes paying attention to not add meat or items with meat base. For fake turkey, there are alternatives that are tasty.

My family has Thai roots, and I'm pretty sure we don't serve green curry in squash bowls traditionally! It's a cute idea though~

Ok so the best thing to do would be to make the bread dough. Keep it in your oven (with the oven turned OFF) overnight. Better at room temp than in the fridge, you don't want to kill the yeast. It's OK as long as it's no more than 24 hours before. Then bake the whole loaf, and slice what you need, and then freeze the rest. Keeps really well in the freezer after it's baked. You can then defrost and use as needed, or pop in the toaster! :) Enjoy!

it's the reaction of the oxygen and the pear that makes it go brown, so lemon juice doesn't actually help. Same for avocados.

Hello! I am not vegan, but one of my friends is. she has told me that white sugar is not vegan because the coal they use to process it contains bone char. thanks! love the videos

Yes, but people, do not forget about palm oil!!! its production is destroying large areas of forests and wildlife (orangutans just to mention one species, so, ok go vegan if you want but read about the products that have palm oil, puff pastry is one of them (if not made with butter) unless stated. And just to mention 'responsible palm oil' do not exist' Does it? Beth did amazing trying this for you vegans and vegetarians... I love her 💕

Hey Beth! They are vegetarian it is just that some Buddhist beliefs (Jainism I believe) consider onions, garlic and leeks acidic--disrupting the bodies natural balance. Also, some vegans feel that since no other animals eat those foods, humans shouldn't consume them either. It's pretty interesting stuff to look in to!

Great video! It's more than time to not let the vegetarians and vegans eat the leftover side dishes, and I love the options for vegetarians and vegans! I just wonder whether vegans couldn't also make the tarte tatin or tarte tatin parcels if they used filo pastry (as far as I remember it is made with oil?) and made a caramel with maybe orange juice? And the whipped cream could be replaced by some vegan vanilla ice cream.

I really wanted to make homemade bread for thanksgiving this year, so happy you featured that bread recipe! Is the flour just all purpose flour? Or bread flour? Also, should I used sweetened dried cranberries or unsweetened? Your videos are so well made, I was a little surprised at the lack of detail in the instructions on your blog. Love your videos, Beth.

I'm your biggest fan from Thailand :)) I would say its not traditional way to serve in a pumpkin/coconut/banana leaf But when we feel like to make it to the top or really special occasion, we do. we don't go through the trouble of carving them anymore though. you can look up 'Thai fruit carving' and you'll see what i mean.

for me too much rozins and too much sweet things :D ...but anyway all menu is really nice inspiration and at least i will try something like this small pumpkins bowls..."squash"? (i have never saw it before...maybe at my country we dont have it:))) ...or with some other vegetables like that. It is really amazing idea ...so, really thank you :)

I made the bread! It came out great, my fear of bread making is officially nixed. Thanks for the tips, Beth! I tweeted kincommunity a picture of it, it looked really yummy. I think next time I might soak the cranberries and raisins in cointreau instead of orange juice ;)
