Oh it's so easy to make. My favorite is to roast it. Line a baking dish with sliced white onion, then eggplant, then red peppers cut into quarters, then roma tomatoes cut in half. Add 5 garlic cloves cut in half, drizzle the whole thing with 1/4 cup of olive oil, and 2 tbsp Herbs de Provence, 1/2 tsp salt and 1/4 tsp pepper. Roast at 400F for 30-40 mins stirring often to allow all those veggies to breakdown and caramelize. Great with grilled meats! Enjoy!

Yes it really can come down to the soil. Every year (spring/fall) put down a mix of compost and fresh potting soil, and some worm castings and just keep doing that and your soil will improve! We had horrible soil when we began, and after a few years of taking care of it it really did get better! The mark of healthy soil are seeing a lot of worms when you dig, means there are a lot of nutrients, no worms, no nutrients. And yes you can get your soil tested too, that's always a good idea :)

Yes we have seen runners pop out of the strawberry pots :) As for the design, I was really inspired by the formal french gardens of the 18th century. My husband has a lot of books on them and he actually drew out the design. It' works well because we can get a lot of plants in there each season, while still keeping a tidy ornamental look. :)

Well yes, cedar bark really does help with the weds and also it keeps the moisture in the soil (so it doesn't evaporate with the heat of the sun) and it then decomposes so it adds to the health of your soil too! :) But another way to keep up with weeds is really just to "patrol" every day or so and pluck them out that way it doesn't build up! Also we don't get much rain here so that also helps!

Yes I thought that might be a fun "follow up" a winter garden tour! OK so the thing with herbs is that certain ones do better at certain times of the year: Summer: Basil, all types. Fall/Winter: Rosemary, Thyme, Spring: Dill, Chives and Parsley. Try grouping them this way seasonally, and I bet you will have better success! Also make sure they get lots of sun, and some "outdoor time" 1-2 hours outside per week. And good drainage is important too!

Ha ha , I know I didn't either until I started doing it. Yes I think it would really be great to do seasonal updates. Learning what grows when, has really helped me make my food more seasonal and has taught me to take advantage of the "seasonal" flavors. I'd love to include this element of learning in my videos, b/c I really do believe "what grows together goes together" and having this knowledge I think has really made me a better cook over the years :) Now time to share w/ all of you

Aw how great! You are so lucky in England with all that rain, I bet you don't have to water much? In fact we put the gravel down because we couldn't afford to water a lawn! The gravel is so low maintenance and this way, we keep the water bill in check and spend it on the plants that we can actually eat! :)

Beth it is like you have read my mind. I have been waiting for this. I actually became inspired by the video where you explained how your garden started, and have actually redesigned my garden to look like yours already. I even put down gravel, and it looks fantastic. I also love the elegant seating area designed by your husband's business. I want one like that so badly but I live in England. You are my inspiration.

Aw love hearing that! Actually the plants would probably love the humidity! They also really love a lot of sun. At least 6 hours a day for most vegetables it what they need. I would check with your local plant store first to find out what varieties do well in your area. I didn't do this the first time and tried to plant things like broccoli which need more shade and cold. After doing more research I realized it was tomatoes and peppers, and other heat lovers I needed! So do check first :)

I grow peas and MANY other plants in my garden and when every friends come over every single pea diassapears. They are sweet and have a delicious crunch to them. Keep doing everything you do. LOl! Oh no! The funny thing is gardening is just like cooking, it just takes a little practice and one day you'll look around and suddenly everything will be thriving! You are a great cook Carolyn, so I have complete confidence with a little practice you'll be a great gardener too! :)

Yes I really would love to incorporate more of this in my videos, since all great recipes start with great produce :) Maybe someday even do a separate gardening channel :) Perhaps when I have a bit more time in my life LOL! Stay tuned!

Oh yes of course, both would do very well in pots! Just fertilize them every 2 months or so with a good tomato/pepper fertilizer :)

Sure just depends on where you live and when you want to eat it. Here in the states we like to have our pumpkins by at least Oct (for Halloween) or at the latest Nov (for Thanksgiving) and since I live in warm California there is no danger of cold weather. So yes you could plant it today if you lived in a temperate climate and were willing to wait at least 90 days before you see a pumpkin :) They do take a while to grow! But worth the wait :)

Beth, your garden is just the most beautiful thing. it's very simple and classy, and yet, so full of life! absolutely loved it. I also grow my own basils in my garden, I don't really know what type they are because they are green when they're young and, as they grow, they tend to get shades of purple. it's gorgeous ;)

OMGosh Beth! Can you please provide more videos like these on your garden and how to garden for beginners? I've always wanted to grow my own fruits and vegetables, but I'm so scared and intimidated by gardening. It would be so amazing if you could create tutorials from how to plant the seeds, what kind of soil to use, how much to water it, etc. Please please please!

Oh yes, the kids REALLY LOVE IT! And they also love all the insects it attracts, grasshoppers, bumble bees, hummingbirds and monarch butterflies. That's the surprising and wonderful thing about gardening, you never know what creature may pay you a visit. We once found a wild peacock in our garden who wouldn't leave! LOL true story! We had to shoo him away and he eventually flew over that tall wall! We sometimes joke that it really is "The enchanted garden"! :)

Funny about your grape vine. We have one that just started to give the most amazing fruit! In it's second year (you can see a pic on my Instagram feed) It's a concord grape and it is sooo sweet! And yes, we grow 6 types of espallier fruit trees that are really wonderful Apricots, Plums and a Tangerine. All the fruit arrives from May-June and then it's done! Not sure how to extend the season, but reading up on the subject! :) So glad you and Mom enjoy the videos! :) Thx for the support!

You can always take the stems and place them in a jar of water and keep them in the fridge. I've seen it done before and it seems to keep the life of the herbs!

This is amazing! My mom also gardens, and we love watching your video so this will be nice to show to her. She plants tomatoes, Japanese eggplants, Swiss chard, basil, and okra. The okra are perennials and keep coming back each year. She also experimented with potatoes too, but they were always pretty small. We also have a section of the garden where oregano took over everything; it's very much like your mint plant so be careful about that too if you plant oregano. We also grow green onions too

They give you immediate gratification and are so easy to grow, but you definitely need to watch that mint it will take OVER! lol! Now if I could just spend less time cleaning up my garden and more time cleaning up my house! I'd be in great shape! That's where you COMPLETELY INSPIRE me! :)

Aw yes you hold on to that garden dream. That's what my husband and I did, for 10 years! And now we have so much appreciation for it, because we worked so hard to get it LOL! :) There's something so rewarding about that! Now when you say anchovies do you mean like the whole grilled ones? :) Or just the canned ones? Have you seen my ceasar salad recipe :) That's a god one that features anchovie paste! :)

This is so amazingly beautiful. My parents just moved into a new house, and they want to cover the back with concrete! I'm going to convince them to let me plant a vegetable garden! I live in apartments but I'll definitely take care of the plants at their house!!

Well, that depends. Do you live in a place where you get snow? If not you can definitely squeeze in some herbs and tomatoes now (cherry toms are quicker,go for those) and look for plants that will mature in 60 days or less. Like lettuce and radishes or cucumbers. All good bets! :)

Yes common problem :) I like to rinse them, wrap them in paper towel, place in a zip lock bag, and put in the veggie crisper of my fridge. They will last longer this way :)

Yes that happened to me too! My oregano was so out of control I had to cut it way back! :) And then eventually just had to pull it out because it was strangling my poor cucumbers! :)

Your garden is so inspiring. How did you even start as far as researching the climate and learning about the arrangement of companion plants? I would love to start a garden of my own but where I stay we have extreme weather.

Sure! Here are some really easy ones: Radishes, Lettuces, Cucumbers, Herbs and any cherry tomato. All really easy and very rewarding too! :)

Hi Beth, I love your garden. I'm in Palm Springs, and having some success with certain herbs and veggies. This late in the summer, my tomatoes are cracking from the extreme heat, so next year I am planting a new variety that does well in the southwest. I don't get the crop you do, but my main tomato plant that has been a good provider is 3 years old!!! My most surprising plants are 3 pineapples. We also have fig, kumquats, and olives trees. This year I added brussels spouts. Frank
