Cooking for children was one of the greatest challenges I've had. A former landlord caught his kids eating my cooking one day and threw me the challenge of making dinner one day a week in exchange for reduced rent. I made Chicken Pot Pie, Orange Chicken, Shepherd's Pie and Tator Tot Casserole. Sneaking in vegetables whenever I could. They loved the roasted Brussels Sprouts!

Enchilada snob here- Hispanic gal from San Antonio. Initially I was skeptical, but wow, Jamie Oliver made legit, amazing looking enchiladas. The ingredients he used are absolutely perfect! Hats off to him! 👏👏👏👏👏👏

He doesn’t come up with them. He learns from others, reading, travelling and different experiences. Also his team has to research ingredients and the steps when it comes to different cultural foods. Jamie just does a healthy spin on them

@@joannederanger4467 trust me it's not if you make bean enchiladas(enfrijoladas) the sauce is the beans, and always using corn tortillas and feta is not a suitable replacement cheese it's too tart(use gouda as it's used a lot in Mexico or mozzarella it is similar to Oaxacan cheese or even parmesan, passable cheddar; Mexican Americans use it. Even if you were to make the red sauce fresh capsicum shouldn't be used it has a raw flavor, it should be dried chiles (there are some that are not spicy like pasilla or ancho) and honestly, Mexicans are all over the world it's easy to find a shop that delivers ingredients. I've found them in Beijing, Sydney, Singapore, Germany, Ukraine, and France and I know there is one in London.

Just made this 😋 Tastes just like it looks... amazing! It did end up taking me 90 minutes though, not 45 as shown on your website... but that's probably because i was taking my sweet time with the cutting and i had to charr in 3 batches!

Glad he said Mexican inspired... Mexican food is cultural heritage of humanity and any kind of adjustment really affects the way the people perceives the Mexican food. It is nice to see the variations as long as people are aware that is not the same thing. Obviously not everyone gets to experience it, and sometimes you have to do what you can with the ingredients you have.

Wonderful!! For those trying to find "fresh green coriander " it's called "cilantro" in this form. Coriander is the name given to the seed of the Cilantro plant.

As a vegan Mexican I'm not mad at all. The idea of the peppers and and the lime skin is brilliant. I mean, I think you were a little shy with the tatemado hahaha (just being sour as the lime). But since I have grown with your food (big fan for 22 years). I'm dying to try it. Not sure if I'm going to change the feta for maybe hibiscus flowers, pumpkin flowers or some nut cheese, but since I'm now living in Japan, I guess it will have to be with the cheapest. LOL. Love you forever

Nice recipe, Jamie - keep it up! Actually, there's no capsaicin (the hot defining factor) in the seeds themselves at all. It's only what has rubbed off from the pepper glands which have the highest concentration of capsaicin. If you were to wash it off from the seeds, there's no spiciness left anymore.

Kids are remarkably happy to eat much of the time when they’ve helped create the dinner. It’s more textures with children than anything and we as adults have a nasty habit of overcooking and boiling the life out of everything. Parents of 80s and 70s kids anyways. I think everything was put into a pot of water until is was limp and tasteless. From hotdogs to carrots. But with my now adult and moved out with their own kids, kids we still keep our themed nights. Taco night, pizza night, tv night with appetizers for dinner. And tv night was trays of fruits and trays of veggies with dipping sauces (not cooked). Dinners were always easy, fairly fast, extremely cheap to create, and over the top healthy.
