⬇️⬇️English recipe follows⬇️⬇️ 財源滾滾爆龍蝦 材料: 本地龍蝦4隻(開邊) 麪餅5個 薑/蔥大量(已洗乾淨) 處理: 1. 龍蝦,每邊1開2,輕手搣去腸臟,清水洗乾淨,擎乾水。 2. 大火煲滾半鑊水,放麪餅煮至半軟身,逐個逐個麪餅夾起,擎乾水,一個個麪餅,捲回原狀,放碟上。 3. 每個麪餅上,加入1湯匙的刀嘜花生油,逐個撈勻。 4. 每個麪餅,捲回球狀,放在碟上。 烹調: 1. 大火在鑊內燒熱油600毫升。 2. 用筷子夾實麪餅,放油中,炸成球狀,放在另一隻碟上,直至炸好所有麪餅,放一邊。 3. 龍蝦,用廚紙索乾水分,加入少許鹽,撲上少許生粉。 4. 加入少量油在鑊內。 5. 放筷子在鑊內,當有少許泡沫升起,表示油溫已可以了。 6. 先放龍蝦頭落鑊,炸至金黃色 ,放上碟。 7. 再放龍蝦尾落鑊,炸至金黃色,放上碟。 8. 薑,去皮,拍鬆,切片。 9. 白鑊,爆香薑蔥,加入清水500毫升,大火滾起。 10. 加入調味料: a. 蠔油2湯匙 b. 生抽2湯匙 c. 糖1湯匙 d. 胡椒粉1茶匙 e. 清水500毫升 加入龍蝦,炒勻,冚蓋,煮1分鐘。。 11. 用生粉2湯匙,加入清水100毫升,攪勻,倒入鑊內,炒勻。 12. 放上碟,在周圍放好麪球。 13. 龍蝦汁,淋在麪上。 14. 完成,可享用。 Money and treasures will be plentiful Lobster balls noodles in CNY Ingredients: Local lobsters 4 Nos. Put on another plate. Repeat it as finish deep frying all the noodles. Put aside. 3. The lobsters, dry with kitchen towels. Add in little salt. Put little tapioca starch on top of it. 4. Add in little oil in wok. 5. Put a pair of chopsticks in wok. It means the temperature of oil is OK when there are bubbles arising. 6. Head of lobster, put in the oil first. Deep fry it into colour of golden yellow. Put on plate. 7. Put tail of the lobster in wok. Deep fry it into colour of golden yellow. Put on plate. 8. Ginger, get it peeled, beat well. Get it sliced. 9. Plain wok, fry ginger and green onion well. Add in 500ml of tap water. Heat up at high flame. 10. Add seasoning: a. Oyster sauce 2 tbsp b. Light soya sauce 2 tbsp c. Sugar 1 tbsp d. Pepper 1 tsp e. Water 500ml Add in lobsters, fry well. Cover up the wok. Cook for a minute. 11. Get 2 tbsp of tapioca starch, add in 100ml of tap water. Mix well. Pour into wok. Fry well. 12. Put on plate. Put lobsters around the noodle balls. 13. Lobster sauce, pour over the lobsters and noodles. 14. Complete.
