I have been Keto/lo-Carb for 20 years. I have been using Einkorn flour for the last 2 years. I am gluten intolerant, and this does not set it off at all. I have a 1 year old sourdough that is made from Einkorn flour. It is a spectacular sourdough.

My Husband is type 2 and has celiac. I just bought some Einkorn flour and Einkorn pancake mix. I made the pancakes as the starter for him to try. NO stomach pains. Blood sugar within a good range. He has not had breads or pasta for over a year. I have used your keto flour and he was very happy. Now I can add a bit of bread back to his diet.

I am soooo excited Victoria! I've been praying that someone would create a flour that would taste like wheat and be low carb and keto friendly. What I and my family needs is a way to make a GOOD pasta and a GOOD pizza dough and also a GOOD bread. I am exhausted viewing vids of the perfect Keto pasta and the perfect keto pizza dough.! If you can do this God bless you!!!! Thank you sooooooo much for your constant search for perfection.

I would love those recipes. I'm not gluten intolerant. Wheat , gluten, fibers, everything bothers my intestines, but I take simethicone to help that😅. I'd like to try something that might actually taste and act like wheat. Years ago I used a lot of resistant starches. No one talks about those anymore. I'm going to re-visit those I think.

I'm glad your back seems to be better, and the shirt you're wearing in this video is beautiful! Looking forward to the new flour recipe. My daughter is celiac but she doesn't have to be low carb so I often bake my stuff separately. I would likely use this flour for biscuits and things I don't make for both of us when she can have rice flour for same. Thank you!

I stumbled onto Eikorn 6 weeks ago. It’s so good and like having a multivitamin . When you add in sourdough it’s even more healthier . Carla who helped start Jovial has awesome videos on their channel on how to use it. Glad you have ran into this flour.

Love this flour. So glad you are goin g to start baking with it. As a type 2 this was the first recommended flour I came across. I have not played with it much and hope to see more recipes out in internet , bring this to the forefront. Looking forward to what you bring us. Happy baking.

I have known about Einkorn for a long time. We call it the flour Jesus ate! lol it's a great flour, and I am so curious to see how to make your blend. But just to encourage you on your other flour blends, especially those that use high amounts of fiber. I know they may seem that they don't have any health benefits because of their lack of nutritional profile. But that isn't true... these fibers are extremely beneficial to our microbiome. There are medical studies on both bamboo and oatfiber and their ability to help with gut issues and lower inflammation because of their interaction with our microbiome. 💕

I'm really happy for everyone who is able to try Einkorn!! Although I'm not Celiac, I might as well be as I need to be wheat free due to my other health intolerances and my need to be gluten free. But I finally found a company who was able to ship me the Bamboo Fiber (I live in Canada) so I will be working on testing out your Standard Keto Flour 2.0 to see if it will work for me!!

You should try it because I used to sell my einkorn bread to a gaps instructors, who sold it to her clients, and some even had celiac and were fine on Einkorn wheat, and all gluten sensitive clients were great on it too. It’s worth a try.

Victoria, i just started watching todays video, but first i need to tell you that I just bought the einkorn grain 2 weeks ago, because the lady at our appliance store told me that her daughter is very sensitive to wheat gluten and so they use the einkorn wheat to make sourdough bread. i decided that i wanted to try it and so i bought it. Now i started watching your video just now and before you mentioned the name of the grain, you called it an ancient grain and i immediately thought einkorn grain. You certainly made my day. 💕💕

I've never tried Einkorn but heard about it from another YT channel Mary's Nest. She is not Keto, but focuses on traditional kitchen/cooking & uses a lot of ancient grains & teaches you how to use them. You should check out her channel.

Well PRAISE GOD!! Finally, someone else that uses Einkorn!! I've been using this for the past 12 years on a Keto / Ketovore diet ... I've done this after becoming a 6x cancer conqueror, and loosing most of my intestines... its the only flour I can use- as Celiac has hit as well, due to the intestines being removed, and the cancer issues. It is not true that if you have celiac some can have it... I can, I don't over indulge, however I can have it... many others who I know who have it, can eat it. I also grinder my own Einkorn berries. I also have loads of issues with Almond flour, that one major reason why I switched to Einkorn... I've helped many other with the same issues I have... it's been such a blessing

Incredible story of survival! Much respect for the battles you have fought! Are you able to grind the berries in a coffee grinder? The suggested grinder is out of my budget and the preferred einkorn flour sold out an hour after the video was released.

@@factbasedreality no a coffee grinder isn't strong enough, you'd kill it before much happened... I purchased a MocMill about 3 years ago, and yes it was an investment, however its part of our plan and we saved up for it. Before that I used a blendtec blender or an old hand grinder... we had to grinder it several times in each of the older methods, however it worked... I make sourdough bread or crackers, cookies, etc...about once a week for bread and... its living and alive, so about 3 days on the counter and then fridge or freezer. Blessings

As others have said, Organic Eikorn flour has around 17grams total carbs per quarter cup (36g) & 4 grams fiber, 17-4=13net carbs (other references indicate even more total/net carbs).

I purchased Organic Anita's Mill, Whole Grain Einkorn Flour (ingredients: organic einkorn) Grown in BC, Canada Its macros are as follows: 1/4 cup (30g) has 20 g carbs, 3 g fibre, 1 g fat I wonder why the values are so different from the product you purchased. I'm gonna try it regardless, substituting part of almond flour in any given recipe with einkorn, just to see if I can get something really tasty. I'm stoked to learn your new, einkorn, flour blend!!!

One of my friends makes bread with Eincorn and I think he grinds it fresh. It has to be used quickly and not stored like regular flour. His family has gluten health issues and the Eincorn is one of the few flours they can eat. It has a nice flavor that is different.

Love the Jovial brand. I have the wheat berries in the freezer. I will say that I have some of the all purpose einkorn. When I needed whole wheat I grinded the berries.

Our family has been making our old christmas cookie recipe with the Jovial Einkorn All Purpose for several years and the taste is amazing and so much more flavorful than the old Gold Medal AP. Can't wait for your new Einkorn Blend recipe! Thanks for your hard work on making Keto better!

Einkorn is the original wheat. It has different chromosomes and proteins then modern wheat. I use to sell my einkorn sourdough bread to a GAPS instructor who sold it to her gluten sensitive and even some celiac patients, and they did amazing on it. I absolutely love einkorn! I’ve been doing keto since 2014 and einkorn since 2016

I can't wait till Friday. After discovering a gluten intolerance I used Einkorn for several years before deciding to deal with my A1C. Maybe I'll be able to use my flour mill again to grind Einkorn berries! ❤❤❤❤❤ Thank you for the smile on my face...so excited!

What did you find your A1c with Einkorn flour? I am prediabetic and went to Keto to bring my A1C down. I’m interested in Einkorn flour if it doesn’t raise my sugars.

@@oosterkamps Einkorn flour was part of my path to healthier. But when I hit the diabetes range for the second time in twelve years I decided to get back to prediabetes with food and exercise. I gave up all grains but oats (carefully). With an A1C of 5.9, I have wanted to try Einkorn again, but don't have Victoria's scientific approach. I wait till Friday ☺️

I think it depends on the brand of coconut flour. The Yupik brand I have is only 8 g of sugar per cup. I have never ever made a recipe that required a whole cup of coconut flour. I will be looking into using einkorn flour though.

I, too, am hopeful regarding einkorn as I wasn't happy with the version using golden flaxseed. I don't mind coconut flour so thanks for mentioning the variability by brand. Yupik is still 32 net carbs per cup as are most brands, it is just that only 8 are already sugar with the rest being presumably starch that turns to sugar once digested. I agree that we only use about a third of coconut flour for whatever recipe uses almond flour while increasing liquids. I don't think Victoria remembered that its use isn't 1-to-1 (and its even cheaper because of that) in her comparison since she doesn't like or use it. Waiting for the new flour blend with bated breath.

When are you releasing the new keto flour recipe that includes the einkorn. I can’t find it. This video was released 2 wks ago. Am I missing it? I looked at ingredients for keto flour 2.0 but no einkorn in it.

Love einkorn. It’s hard to work with, because of the low gluten. There is a learning curb, but it is a very flavorful grain! Jovial has the best sourced einkorn out there, and her bread book is excellent.

The new flour is also 84 grams per cup so the recipes for my NSKF 2.0 will work with the new recipes for the new flour as well

20 carbs per 1/4 cup is way too high for keto, but my daughter who's gluten-free uses it with no problems.

It’s 9.75 net carbs per 1/4 cup. It’s 13 net carbs per 1/3rd cup and 39 net carbs per 1 cup. But I don’t use it alone I have a mixture that drops those carbs drastically. That’s for Friday Lord willing. This is ONLY WHOLE WHEAT EINKORN

Thank you thank you thank you! I can’t wait for your new flour recipe to come out. I’m gluten intolerant and have heard of Einkorn flour before but just assumed I couldn’t use it. I will definitely give this new flour blend a try. Also, please let us know if this affects your epilepsy.

My Amazon lists the flour for about double the regular price. I just found it at my local Whole Foods.

Make your 2.0 flour with almond flour. I wish the comparison would have been to almond flour instead of coconut flour which isn't in your flours now. Then could tell what the macros were going to be and the benefit of it carb wise. The U.S. Department of Agriculture reports that a 100 gram serving of einkorn flour contains approximately 333 calories. A carbohydrate count of 66.6 grams. Protein content is 13 grams in this package with only 6.7g of fiber.

I cannot eat almond flour or coconut, not sure why but after hearing about the added sugar, I think I understand it now.. I am going to try this, but I am gluten intolerant and this might not work for me.. but I will remain optimistic till I myself try it.. Thank you for doing all the research on these flours. 🙏👍
