I love this dish, I used to give a vietnamese friend a whole turkey to make this. The best part is dipping the french bread in the broth.

My MaMa also used cubed carrots for extra color and sweetness. She never used sweet potatoes or taro unless she was making a sweet curry with peanuts. Her curry was always the best. There was one restaurant in a food court once in Calgary that made a curry chicken very similar to my Ma Ma. The lemon grass is what makes our Vietnamese curry stand out, my MaMa also added coconut milk. Her cooking process and steps are way more simple but refined at the same time. Ma Ma's has a Thai and Cambodian twist. She was part Chinese and Cambodian. I miss her very much so I appreciated watching this. I also learned to make the best vegan curry in the world.

A coworker gave me some of her Vietnamese chicken curry with soft chewy French bread and it was sooooo good! I made this recipe and it taste exactly like hers
I made this and the flavors are amazing! The two types of potato plus the taro, deep fried and then enrobed in satiny coconut-lemongrass goodness... Just wow. I will be trying more of your recipes! Thanks Helen!

When I was a kid our neighbor, who fled Vietnam when she was little used to make this dish for me. At least I think it was this. I remember it being a little bit sweet. I loved it and I remember it often. They were such generous and kind people. Thanks for reminding me.

I went shopping straight off the ingredients list and made this tonight, I like mine sweet so I added sugar to taste at the end. Sooooo goood, with the "Vietnamese sandwich" rolls warmed and crispy!!

This looks exactly like the one I had in Hue earlier in the year. Nice tip about the frying because the Malay and Indonesian potato curries do thicken up with the stewed potato so this is more soupy and light. I can almost smell it!

I live in Minnesota. There is no curry in Minnesota. For a while, there was a nice curry restaurant in maple grove, but it closed down...I miss curry so much. Probably going to have to make this just to get my curry fix.

Ryan Rognas you need to go to oriental store or cub foods to get curry. In terms of restaurants, head to the cities, they are all around.

Helen, I love the tip on frying the potato/taro to help them hold their shape. My mom's curry was a bit thicker and creamier than yours, though. She probably used more coconut milk or coconut cream and less water. We dig fat in our house. LOL! I think the only curry powder we use is the Vietnamese Madras Curry powder that is commonly found at the Asian/Vietnamese stores. Carrots also work along with the potatoes. Yum!
