I agree with you. There's a lot of uppity Vietnamese people in the US that think they are better than others because they speak Vietnamese better. That's like me going to Vietnam and criticizing the people there for not speaking proper English.

Why is everyone flaming them about how they speak? They are americanized asians. They grew up in america. what region they’re from and how they’re parents spoke the language, and most the people flaming them are actually asian which i’m surprised about, they are from the country they should know that different parts have different accents, i personally am from Canh Tho which is in the southern part of vietnam and the accent is very different than the accent from Hue or Da Nang. I cannot understand what they’re saying and they probably don’t understand what i would be saying. the same goes for every asian country including China, Cambodia, Japan, Thailand, etc. In my opinion just be happy that they are even spreading awareness to our countries and that they are representing us and educating the people about culture, food, language, etc. That being said it’s for the culture so be happy.

I've eaten canh cua plenty of time growing up, except my family's variation is with shrimp instead. My dad's family lives in the Mekong Delta so I've eat his Ca Koh To, too. Having a boiled egg mixed in makes it really good with a serving of rice. Except for the dessert, I haven't really seen the others before. Vietnamese clay pot dishes aren't that common to eat in restuarants in Vietnam either. It's home-made most of the time.

I used to get dishes of this sort at a couple of Vietnamese Restaurants along Pacific Ave. 10 years ago when I spent a lot of time working in the Stockton-Tracy-Lodi area of California 10 years ago. but there was only one such Vietnamese place here in Fresno and it closed years ago.

FACT: the concept of putting fish sauce on cooked fish is like bathing a skinned, cooked fish in the salty juice came from months of rotten bodies of it's own species. Love it. ;)

Well actually the caramelized catfish is very easy to cook. You will just have to cook sugar until it turns into caramel and then put fish sauce in it and put the fish in and cook for about an hour. Then put some pepper on it and enjoy with hot rice or " canh chua ".
