Newbie here but I can tell you that my reaction would have been the same whether watching you a long time or freshly discovering your amazing channel. I can honestly say that I got the whole experience.....all except for actually tasting those amazing dishes. It reminds me of my time as a child and my dad worked on the fishing boat for the navy at Mayport, Fl. We would save all the smaller snapper and such and give it to some Filipinos who would meet us at the dock. In return they would show their gratitude by bring all kids of awesome Filipino dishes. OMG was that the absolute best seafood on the planet. My dad was in Viet Nam in the late '60s as well and would try to describe their street food. I got the seafood experience vicariously through my dad back then. Watching your videos on Asian food brought back some wonderful memories.

I’m so sorry but I think I have to say that it probably takes you at least 1 year to understand basic Vietnamese dishes. Because Different places in Vietnam bring different techniques, flavors . Even Vietnamese like us don’t even know it all . The sauces are so diversified and ingredients are so complicated, the herbs, spice , a lot of things only have in Asia

Don't be surprised by the corn 🌽. I grew up in NYC and one of the most popular soups in China Town is something they called "Velvet Crab 🦀 and Corn Soup" . Basically it seemed like Real Crab 🦀 meat and Creamed Corn along with other flavors and I think Eggs like you see in EggDrop soup. I would have enjoyed everything you had today.Ah-✌️☮️✝️

It's often imitation crab. Made from fish paste grinded from a pollock. Some places do use real crab meat.

A tip for getting the crab meat. A fork. The underside of the shell is thinner. Poke one tang in and you can ratchet like an old can opener. There's a lot of meat in each leg. Some of the best chunks are in the body. The muscles that move the legs. For the knuckles and claw you can use a nutcracker or if you are serious vise grips. Scissors are good too. Sadly if you don't have the right tools and know where to look half of the best meat gets wasted. Show up at the seafood buffet with your own tools and own it like a Boss. Cutting tough things like snails and abalone thin and pounding and poking it helps soften it up a bit.

A wise man once said It's better to remain silent and be thought a fool than to speak out and remove all doubt. You'd be wise to remmeber that.

Sonny, you are the man. You have one of the best channels on KZbin. I have one question, why is Asian seafood so much bigger than the seafood in the U.S? Huge clams and snails and the crabs here look like babies but all the crabs in Asian videos are so big, I can get full on three. When I google it, they give me info on the seafood industry and blah blah blah. It seems like you get a bigger and better product in Asia, and we get low quality leftovers in the U.S. PLEASE can you help me? I live in Georgia and I'm paying 70 bucks for a dozen pitiful small crabs and the guy says, "They're number ones". I'm not an idiot, I have driven 152 miles to get quality seafood, The crabs were larger but still not like in Asia and I get a lot of unsellable seafood for free. Me and my wife eat everything. Sorry so long winded but this is driving me crazy. Keep up the good work from Eric.
