Tamales! Tamales! This is your detailed step-by-step recipe. I walk you through the process of making tamales in a Mexican home. Tamales are a corn masa (Dough) that is spread on a soft corn husk and filled with your choice of protein and traditional fillings. Once the Tamales are steamed get ready to unfold into a warm soft flavor combination that will bring comfort food to another level of deliciousness. Make sure to discard the corn husk after consuming it. I hope you enjoy the views family take on tamales. I always recommend making it comfortable for your home. Cook time for shredded beef 2 1/2- 3 Hours
You can substitute the protein of choice: for chicken the cooking time will be 45 min. If using pork butt cook for 2 1/2 Hours
Cook time for tamales 1 Hour
Prep time will depend on your level of cooking
This recipe will yield 2+ Dozens of Tamales
The beef in this recipe can be substituted for your favorite protein such as pork or chicken

100 or 200 Tamales Recipe- • 200 RED BEEF TAMALES R...
Soak Corn Husks (Timestamp 2:00)
24-Corn Husks / Hoja Enchochada - 45 min to 1 hour
Enough water warm water to cover and soak leaves
Shredded Beef (Timestamp 5:01)
Enough water to cover your Beef/ Protein
20- Chiles Guajillos (Make sure to take the seeds out) Generally, Guajillos are not spicy, it's to add flavor.
4- Pounds of Chuck Roast / Diezmillo en trozo or you can use pieces of Chuck Steak
1- Tablespoon of Chicken Bouillon Or Salt to taste ( add as needed, remember to start small)
1/2- Large White/ Yellow Onion or (2 Medium Onion)
1- Whole Garlic
*Remember to set aside:
3-4 cups of beef broth we will need the broth to season the chile sauce for the beef filling.
All the Boiled Chiles
The whole garlic
Cook time for the beef: 2 1/2 Hours
*3 Hours cook time will give the best result for tender fall of the fork
beef
*Make sure to shred the beef as soon as it's done. If you leave it for later and it gets cold and difficult to shred.
*Your beef filling is now ready to be used or you can refrigerate the sauce filling and continue the next day. Just make sure to warm(not boiling) it up before you begin to fill your tamales.
*The filling will keep in the refrigerator 3-5 Days (Do not add the onions when refrigerating or to the filling)
*If freezing, please ensure the filling has cooled to room temperature before freezing.
*The filling will last 3-4 months in the freezer
Making the Tamales Red Chile Sauce Shredded Beef filling (Time frame 7:04)
4-Pounds of Shredded Beef
20- Boiled Guajillo Chiles
1- Boiled Whole Garlic (*saved from previous shredded beef)
2- Cups of Beef Broth + 1 Cup for the cooking process (you set this aside earlier)
1/2- Tablespoon Chicken bouillon or Salt (Make sure to adjust to taste)
Cook time 5-8 Minutes
Blend ingredients with 2 Cups of Broth
Make sure you have enough broth in the sauce to keep the shredded beef from drying though the process. (Timestamp 9:17)
SAVE 1 CUP of Blended sauce to add the flavor to our Red Chili Masa
Red Chile Masa (Timestamp 12:07)
2-Pounds of unprepared masa/ Masa para Tamales
1- Cup Lard or Shortening
1-Cup Red Chile Sauce
*adjust chicken bouillon or salt to taste (TIP! Timestamp 26:26)
-Filling ingredients ((Time frame 34:32)
Red Chile shredded beef
1-Anaheim Pepper
1-Potato
24- Green Olives (I recommend pitted if little ones will be eating tamales)
*Slice potato and Anaheim pepper thin so it doesn’t poke out of your tamales

Spreading and filing tamales begins at (Timestamp 35:31)
*The amount of Red Chile Masa in your tamales will vary on the corn husk. 4 Tablespoons is a good start and adjust as needed

Great recipe. Tip: you didn't mention that there is an inside and outer side of the corn husk.. I was also taught after you roll the tamal the top was folded opposite way of your fold. Your right we all have family secrets. Enjoyed this video so much.

I remember my first experience with Tamales. It was a act of kindness I will never forget. I had started working in a tomato cannery when I was only 16 years old. I didnt have any money for gas and it was too far to drive everyday so I was stranded at work until I received my first paycheck. I slept in my car and ate canned tomatoes of all kinds for almost a week and a half. We were working 12 hour shifts 7 days a week. I was sleeping in my car one day and I was woke up with the sound of children playing. I looked in the dirrection of the laughter and noticed the children were laughing and pointing at me in my car. A older Spanish Man came out and rounded the children up and made them go inside. I fell back asleep. A few hours later I was woke up again with a knock on my window. I looked over and seen the same Man and Children standing outside my car. I rooled down my window and was met with the most amazing smell. The Man handed me a plate full of food and walked away without saying a word. The next Child sepped up and handed me lemon aid and the next Child had spoons and forks. I was so hungry for real food at that time I could have ate without anything at all. I was so flattered by this act of kindness and I must say it changed my life. I am a better person today because of this example and I always keep my eyes open for others in need.

I am trying to impress my mother in law with Tamale making, I am Irish she is, of course, Mexican so I used your recipe and she said no Irish Girl can make Tamales like that I must be Mexican somewhere down the line...hahaha Everyone loved them, I did a few practice tries before making them for her but stood strong to your recipe. Gracias, I enjoyed this! Although I cried through some of it. I use to help my mom (full blooded Mexican) make Tamales. It was just meat and Masa. That's what I loved. Today is the 8th Anniversary of her passing, reason for crying 😢 I miss her Tamales so much. I do make her Molé, Menudo, Enchiladas, Rice, Tacos, etc. Have never attempted to make her Tamales though, a little different from the way you made them, but Jesus, they were good!! 😋 Thank you for bringing back memories , I have a feeling my mom sent me to this video! 😇😔😢 Always be there for Your Mother! I wish mine was still with me 🥺

Thank you for sharing this. My Mom passed away 2 years ago. I miss her dearly. We are American/Mexican family too. Just hearing you girls talking with your mom brought back memories of my sister and I with our Mom. She is missed. Last week my family lost a friend (my children friend) who was like an extra son to my family. He was 21 years old. Cherish theses moments and tell your family all the time that you love them. Take tons of pictures and videos. Tell your mom you want to be able to look on theses videos to see her, not just her voice. Much love to you and your family.💜💖💖

Ladies I would like to thank you for your videos. At 67 years old I have learned to make tamales. I used my kitchenaid mixer to work the dough. I did it like a cake from scratch. I creamed the lard, then added the masa , then the broth and blended well. Did the water test. It floated! I cooked to test the flavor. It was perfect. Thank you. Give a person a tamale, they wait for more. Teach them to make the tamales they become a tamale cornacupio factory . Thanks again!

I’ve never seen anyone spread the masa into the corn husk with a paddle or a spatula. I’ve only seen people use their fingers to do it and it seems easier with the fingers. The olive is an interesting touch as well. Couldn’t someone break a tooth on the pit?

It is a very special gift you are giving the world and I am personally grateful for it. I lived out west in California where I was introduced to authentic Mexican food. I moved to CA with my two year old daughter because I was offered a good job...my next-door neighbor turned out to be an angel who came over and introduced her self the first day I moved in she was an older woman who spoke very little English but we managed to communicate very well...The whole family sort of adopted me ...I paid her to watch my daughter while I worked..She was seriously the cleanest person I had ever seen..if she had t change my daughter's clothes they would be freshly washed and folded. I felt so lucky to have such top-notch child care she really seemed to love my daughter as her own granddaughter. There was a time when I was working so much my daughter spoke more Spanish than English. This beautiful Matriarch made breakfast lunch and dinner from scratch everything fresh. I loved sitting around doing the tamale filling which was already made I never had a chance to watch her make it. I grew up in foster care and this family showed me what it felt like to have a loving family....they taught me so much! I am so glad you are sharing how to make these as my daughter called the woman Abuela and saw her as her own Grandmother . Abuela passed on a few years ago..my daughter still talks to the family and misses her Abuela...I am so excited to make these for my daughter

This literally had me in tears, remembering my grandma teaching me and my sis how to make tortillas de harina. Unfortunately my sis passed away 3 yrs ago. This is why I love watching you guys... Hi there! FIRST This was the first time ever I made Tamales! Your step by step directions are spot on! In your video you said, if you can make the masa in your stand mixer I want to know how. Well, I injured my hand, had to have stiches so I used my 6Qt Bowl Professional Kitchen aide mixer. This is what I did. I put the shortening in the bowl with the whisk attachment and let that puppy fly! I beat it until it had the consistency of yours, that took about 5 - 10 minutes on high, stopping to scrape down the sides. I then added my masa dough a little at at time, with a little of the broth, making sure it was smooth before adding more. This step took about 15 minutes. I checked periodically with the "float" test. They came out fluffy, soft and FULL of Flavor. My grandson (13 months) had 2, and my daughters and husband are having an early dinner, because they can't wait. THANK YOU for a WONDERFUL video! THANK YOU for a WONDERFUL RECIPE! THANK YOU for SHARING your love of cooking! BTW These tamales were a Valentines Day gift for my husband of 34 years. HE is a happy camper!

I couldn't go home to California for Christmas this year so I decided to cook a Mexican Christmas dinner for the anglo family I live with here in Baltimore. I was able to make tamales that rival anything I grew up eating and I was so proud to be able to provide that experience for them and their children. Your video was the reason I was able to do that. My new daughter in law is Mexican American. Her mom speaks some English- I have been using DuoLingo to learn Spanish. I am also using your channel to learn the language and to learn about the Mexican American culture in this country. Their wedding ceremony is in May and I want to understand my son’s new family and be able to make myself understood, also. Please bear in mind - I grew up in Northern Maine, very close to the Canadian border. I just love my new daughter in law and her mother has been like a real Mom to my son (I live in PA & they are in Colorado) it comforts me so much to know that he is so loved while so far away.

I am from New Mexico, and we put green chile, chicken, queso fresco in some, and pork with hot red chile and dice onion in some. Then you ask for some red and some green. Growing up in a large Mexican family, our tamaladas every year was legendary. We made hundreds every year! This recipe is very different from how we made it, and I'm so excited to try it!

I do it the easy way......I order mine from Texas Lone Starr tamales in Texas. They ship right to my door steps in Georgia. We visted San Antonio about 25 years ago and came accross a tamale factory , bought some and ate them off the hood of our car, been ordering tamales ever since.

I use a hand mixer. Mixing by hand killed my shoulder, the hand mixer whipped the Manteca real nice. Then I slowly added the maza, chili and seasonings. I mix it until I get a peanut butter consistency. But I did grow up making them by hand like you just showed us. I remember as I got older, my mom handed me the job of blending the Manteca and maza. I’m now thinking it was probably because it was hard on my mom’s shoulders. Miss my mom and her tamales!

Judith Loera My brother is vegan and we are half Mexican PR and German but we substitute with beans/cheese, rice, you can also use jackfruit for a meat substitute, tofu, corn, carrot/sweet potato, even raisins since my family in Mexico is from Veracruz! I often google vegan/ vegetarian recipes for any ethnicity! But we love Mexican food so we are always incorporating it!hope I was of some help..

Judith Loera I made a great recipe for vegan tamales you can do veggie shortening and instead of chicken bullion u can use the better than bullion veggie one and do the sauce the same and use jack fruit for the “meat” you the jackfruit in the oven to great texture it’s amazing

SHE TIED IT!! My Grandma use to tie it!! I miss my Grandma...she taught my Mom to cook. My Mama is Irish and she could cook when my Grandma finished with her 😊😊 I remember my Grandma, Aunts and Mom got in the kitchen and made an assembly line to construct every tamale! When they got all the tamales constructed my Grandma made what she called drunks out of the remaining masa and meat and we ate those because the tamales were for Christmas Eve after Mass. Those are my best memories because the following year we lost her and it still hurts my heart! As I get older I miss her so much more!! I love that y'all treasure your Mama, I hope your kiddos treasuer her even more and make many, many, many memories 🥰🥰🥰🥰

Yes, ready! We are spoiled! I had a tamale lady that came to where I worked, she was wonderful, everytime she came I knew how hard she and her children worked to make those tamales, I would buy them for everyone I worked with, I wish I knew where she was today. Much respect! We have a mixed family too, I like that "a united nations family".

I had no idea tamales have olives and potato in them. I never knew that masa was that soft going on the husk. Wow!!! I thought I killed myself making our lasagna. There’s not a dish in the world that takes more work than this. You are a super woman....SO PATIENT. This is LOVE! I am so impressed with how hard you work for your family.

Those are not traditional. Olives are not in any tamales from northeastern Mexico, nor is potatoes. The dishes is regional, so I think it's more towards California where olives are used

When i make tamales,i put some corn husks on the bottom of pan instead of the foil, than i stand the tamales on it, they cook real nice , but if you put to much water than you have some swimming tamales and you don’t want that. I have to tell you we are in our late 50’s and early 60’s. I grew up in a community of Latinos. I was used to wonderful authentic Mexican cooking. I introduced it to my spouse when we went back to my hometown. Unfortunately where we live there is not very many good restaurants that sell authentic. We found you on you tube and we started making your recipes. A local restaurant tried selling Birria on a Sunday we thought we would try it. It was terrible!! You taught us how to make it much better!! Ours/yours is so good!! Thank you for your videos!! You are awesome!!!

The best Tamale vid I have ever seen!!! Detailed and authentic! I was born in TJ but adopted by my loving caucasian mother. So I never grew up with my biological food heritage... I'm a pastry chef so I love to cook and this vid will be my tamale bible for this Christmas! Keep making these "Authentic" recipes because unfortunately this newer generation of kids don't like to cook so we have pass on the tradition(heritage)! When I moved to Mexico I never made tamales in my life. My first job was in a restaurant. I pell the corn husk , grain the corn, and fold the tamale. Now I’m back people say tamales are a lot of work I say it easy and fun. To see you and mom make it makes it fun and love to watch.

Us kids would stand around and wait for the " tamales perdidos" or just being privledged to be allowed to listen to the stories and secrets spilled by my Mami and Tias. Most of them are gone now. My favorite part of making tamales was when my father lived and I would be the first to taste it with him he would amasar 25 pounds of masa for Christmas it is a process so they could come out delicious now I make them for my kids and defenetly do honor your mom and dad I no longer have them with me my dad passed when I was 17 years old and my mom when I was 33 years old God bless your mom 🙏💙💙

I’ll have to try this. My grandmother did not add beef liquid or red salsa to her tamales. She soaked the corn kernels overnight to rid the corn of lime. Then she used the old fashioned steel grinder to make the kernels into a paste. Then she added lard to that paste. It was a delicious corn flavor and very white with the red pork or beef inside. I want to try yours though. I’ve gotten rave reviews from anyone that’s eaten my tamales. I make them better than my moms. My grandmother was my dads mom and she was from La Sangre de Cristo, Tubutama, Mexico. She was born in 1914 and passed in 1980. I watched her make tamales when I was little and the steps seared into my memory. Thank you for sharing your family recipe. I’m always willing to try something different.

The first time I made tamales I had small children and I found that part tedious as well just spreading of the Maza on the corn husk. However, now that I am a grandmother and I have an empty nest I find that to be the most soothing part when I choose to make them alone it’s like my meditation zen place

That's the difference between youth and sage.... as a young woman your mind was on REV keeping up with all of the necessities of life... Now, as a sage, you've slowed down, no longer racing, and you can enjoy and appreciate, as you say, the Zen of Tamale making. If only we could embrace that Zen place in our youth we'd be much happier, much younger. My favorite part besides eating tamales was being around my aunts, uncles and many cousins. I also realized that there was a heirarchy. The adults and older cousins got to place the meat in the corn husks while the younger cousins were the masa spreaders. Very fond memories. And also, just hearing Spanish and English going back and forth.

I made my masa in the stand mixer for the first time and let me tell you, it’s the ONLY way to go. I was able to cream the manteca (lard) with the baking powder in a couple of minutes. Then I added the maseca (masa flour) and mixed that together to coat the maseca into the manteca. That was another couple of minutes. Then added the broth. I mixed until it started to float. My masa was floating in the water in probably less than 5 minutes. When I cooked it, it was the fluffiest tamal I’ve ever had. I’ll always do it this way from now on! Love the vids! I’m a new subscriber! Can you do some Mexican-Korean fusion dishes. Like maybe some bulgogi tamales? Or kalbi gorditas or something?

Thank you for this post. I was so hoping it would work. I cant make Tamale's anymore because I have had 2 c-spine surgeries because the slipped disk calcified and was cutting into my spinal cord. My neurosurgeon says he found another disk and I will probably have to go through a third surgery. I am still in pain so its hard for me to mix the Manteca and Maseca by hand.

I am crying as I write this comment, seeing this takes me back to when we'd get together every year to make these delicious tamales de Carne. Down to how her mom would tie them on each end...and I love how conversation just picked up. And yesssssss, Steph is so right. I was part of the assembly line from the time I was 8-9. My abuela made sure I was learning from a young age. I also got in on some great chisme from the tias! Those were good days. To me tamales are like a work of art and love..people in my neighborhood would give them out for Christmas 🎄 and I would bake them cookies, brownies..this was their way of showing love and kindness..to this day these have been the best Christmas gifts I've ever received..spread the love,,make tamales 🫔 lol

What a wonderful video! My daughter is dating a man from Mexico and will be visiting during this Christmas season. I have been the host for our entire family Christmas celebration for 35 years so this is a very important holiday for me. I want to make an authentic dish so that he knows that I embrace and welcome him into the family. My parents came from Italy and instilled in me the same traditions, culture and love of family like you girls. Treasure this time with your parent(s) because once they are gone, these memories will guide and help you forever. I knew this video was legit when family was present. My intro to Tamales was on Christmas eve. I was in law enforcement and responded to a very nasty domestic violence call. Initially, the Mexican family was polite but very distant. After finishing my investigation, I spent some time with the victim, who was a real sweetheart. Next thing I know her parents insist I stay and eat home made Tamales with the family. Obviously some drama, more though was love. One of the best Christmas eves I ever had, initially complete strangers, then special friends, all in maybe two hours.

I loved watching your mom make the tamales!! The 'leftovers' dish at the end looks absolutely devine! Reminds me of my mom making 'cookies' with leftover pie dough. Memories for the little kids Which, now, is us! And we try to make those same memories with our little ones. Thank you for sharing.

Thank you, thank you for showing the part of you , your sister and mom just talking and telling stories while cooking. It reminded me of my time back back on the Rez with my family. I now live 1900 miles away from my family. It’s hard at times but just watching you with your made me feel so much better. Thank you

I fell in love with your Mom. Always honor you Mom. She's a total sweetheart💕💕💕 I was a tomboy as well. I thought boys were put on this planet just for me to beat up on until I turned 16-17 years old. I was still climbing trees at 15 and playing tackle football 🏈

My family is Slovak, but I have to say that at 21:15 that sure looks right! I had been in cooking school years ago, and I'd worked in a FINE restaurant for a year. I am no longer in the food industry (years now), but I do still love to cook. I've pretty much mastered Scottish meat pies and Chinese won-tons and I would REALLY, REALLY like to make a near perfect tamale... ! OH MAH GOD! Yes. I'd like to make them PERFECT but I don't wish to feel like a failure so I will settle for near perfect. Perfection is difficult. Your instruction is awesome, and very understandable. I am SURE I can manage, ... and maybe manage a perfect one on my second try.... This isn't easy by any description!!!! Nope! Thank you SO much, and I will keep trying till I get a good result. Not 'hard' but not 'easy', either. Thanks!

I made my first tamales the other day and I did mix the masa in a stand mixer and it worked out great and the first time I did the test for the masa it floated.. I was thrilled.. 😊 The whole process is a lot of work,. I did it in 2 days, I did the pork and the chilies the first day and the masa the 2nd day.. the only thing is mine didn’t have enough spices, I think I was afraid they would be too spicy and they didn’t.. Thank for all your videos and showing us how to make the best Mexican food..

This made me tear up. I had to cut my family out for toxic reasons and not being supportive. My mom never wanted to babysit. And very biased. And I cant wait to break the cycle and have grandkids one day to give them all the love❤

This sounds like something a struggling toxic, unsupportive/narcissistic mother would say; one who likes to gaslight her kids to dismiss taking responsibility instead of working reciprocally together as a team with her kids. --Not saying you are one of those mom's... The tone just sounds a little familiar. It seems like it has an undercurrent from someone who might be offended and feeling the weight of a guilty conscience?😆? To My ladies out there: If all you ever wanted from your mother was her love.... But never got it. -Know that all of the love you seek is already your's. And you were worthy of it, and infused with it the day you were born. ....Your God always loves you. Always has and always will. --And if that's not enough,🤔 you can always get a good mother in-law to love, or adopt a sweet mom for the senior center.🤗💕

This is my family:( Mom babysits for my sisters kids, but always says "I dont know why, I am just a bad grandma to your boys". Like girl. My poor kids are so lonely. Both sets of grandparents dont care, never see them. Cutting them out this year, im done!

I like when Mom speaks English. She’s very good!!! Lucky family to speak 2 languages. So much fun to watch you cooking and loving each other! Wish I had that. Great video. I appreciate the traditions and hard work that goes into this. I visited with a Mexican friend to see family at Christmas in Phoenix, AZ. We went to so many houses and I got to try many different kinds of delicious tamales. He is 1st generation so this was authentic foods and so so good. Each house we went to I got to see the process and the labor of love each family puts in to their tamales. They force fed us so much and I laughed and drank so much cerveza. First time I had ever been away from home for the holidays but they were all so kind and treated my daughter and I like family. ✌ & 🤘 Much Love to Phoenix.

My abuelita taught us to spread the masa onto the smooth side of the husk, never the rough side. That way the masa did not stick to the husk and came out easy and whole. Have not added other ingredients other than the meat, but yours does sound tasty! Thanks for the video, always like to see variations!

As one who doesn't have her grandparents or parents here on earth anymore..... absolutely honor all your elders you have left. I am blessed to have my Grandmother's 102 year YOUNG sister, my Great Aunt, Elinor Otto living with me. She is so full of life & has so many stories to share. I'm trying to glean as much wisdom as I can. She is a National Treasure in so many ways having built airplanes for over 67 years! Only stopping when BOEING shut the Long Beach Plant down laying her & ALL EMPLOYEES OFF just about 7 years ago when she was 95! She's been wanting Tamales so I'm going to make these for her for Christmas. Thank you so much for the great instructions & stories & family secrets. I'll have to let you know how they turned out & how she liked them. Probably skip the potato & pepper but she loves olives. At least some will have olives. I've only made Tamales once, years ago, assisting a friend who had made them for years. So they were great but I can't really remember what I did other than do what I was told...... My kids and I always talked about the sweet lady who would come around the apartment complex that we lived in selling homemade Tamales. My daughter and I had talked about trying to make some now that she has 5 beautiful children of her own. God bless you all. Not only did it bring back some memories of that sweet lady we would by a dozen from but it gave me mad respect for how much work goes into it.

When my grandma teaches me to cook... It makes me happy because I feel like it makes her immortal and I'll always be able to visit her when I make her food, and even though she taught me to keep the family recipes in the family. -I like how they say to pass it forward... Because I feel like the spirit of her mom will live that much stronger through the more people that make and eat her food 💝.

I just found you. I love watching your family. ❤ My moms from England and my dad is Mexican. My grandmother passed away 30 years ago. So I didn't grow up learning how to make tamales. Thank you for sharing. ❤

I have always loved Tamales. When I was little, my dad fixed them frequently. He was not Hispanic, but he was born in and lived in Capitan New Mexico. So he lived Mexican food. He loved spicy food. I like a little spice, but not too much. In Costa Rica, they wrap their Tamales in Banana Leaves.

My favorite Tamale story, was at Christmas 🎄 time. All my sister-in-laws, my Mother-in-law and all the husbands and children 👧 playing. All the woman would gather in Donya Maria’s tiny kitchen, talking and laughing 💝. Spreading the Masa and stacking all the tamales in a large steamer. The hard part was having to wait until the tamales were ready. I am 73 years old now, and all those wonderful folks are gone. Pretty good for a grenga.
